Who Loves Cookies? I do!!!
Well I'm on a lifestyle change at the moment so cookies are a bit of a no go for me at the moment but hey, that doesn't stop me from telling you what my favorite recipes are!
I can smell the delicate scent of a home baked chocolate chip cookie, see the Afghan biscuit smothered in chocolate frosting and the sweet decadent flavor of an Almond Crescent....oh stop!!!

Super Easy Shortbread
Ingredients
250g butter
120g icing sugar
210g cornflour
210g flour
dash of salt
Recipe Tools
Method
Preheat oven to 150 C (300F)
Cream together butter and icing sugar add flours and salt and knead for 5 minutes.
Use icing sugar to dust surface for kneading. Roll out and cut into shapes.
Bake for 30 minutes
Lemon Kiss Cookies
Lemon Kiss indeed!
This recipe I got from Taste.co.nz the cookies are light, delicious with a a lovely tang from the lemon honey!Ingredients:
125g butter
½ cup caster sugar
1 egg
Grated rind 2 lemons
1 cup flour
1 cup cornflour
1 tsp baking powder
1 tsp ground mace or nutmeg
½-¾ cup lemon honey (lemon butter)
icing sugar, for dusting
Beat the butter and sugar together until creamy. Add egg and lemon rind and beat well. Sift together the flours, baking powder and mace or nutmeg and stir into the creamed mixture.
Place heaped dessertspoons of mixture onto a greased baking tray. Bake at 180°C for 12-15 minutes until cookies are firmish to touch and have begun to brown lightly. Cool on a cake rack.
Join cookies together with lemon honey and dust with icing sugar to serve. Store in an airtight container.

Chocolate Heaven!
200g butter1/2 cup sugar
1 1/2 cups plain baking flour
1/4 cup cocoa
2 cups cornflakes
chocolate icing and walnut halves for the topping
Cream butter and sugar until light and fluffy. Sift flour and cocoa. Stir into creamed mixture. Fold in cornflakes. Spoon mounds of mixture onto a greased cookie sheet (tray), with a fork gently press down slightly.
Bake at 180C(350F) for 15 minutes or until set.
When cold ice with chocolate icing and top with a walnut half.
Makes 30.
CHOCOLATE ICING
2 cups icing sugar/mixture
1/4 tsp butter
1/4 tsp vanilla essence
2 tablespoons water (approx)
Place all into a bowl and mix to a smooth spreadable consistency. If the mixture is too thin, add more icing sugar, if it's too thick add a little hot water until desired result.
Nestle Toll House Cookie Recipe
Nestle Toll House Cookies
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks, 1/2 pound) butter, softened
3/4 cup granulated [white] sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups (12-ounce package) NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Directions:
1. Combine flour, baking soda and salt in small bowl.
2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture.
3. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
4. Bake in preheated 375F oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
