Welcome to my lens on Favourite Cheeses.

Cheese is a generic name for varied and diverse group of milk based food products.

Cheese is valued for its storability, its long life and its nutritional value. Cheese provides calcium, protein, fat and phosphorous.

So how many cheese varieties are there? The answer is hundreds - literally. There are over 700 differently named cheeses in Britain alone.

This lens brings you a few of my favourite cheeses - I hope that you enjoy your visit.

The First Cheese?

There is a lot of debate as to when the practice of making cheese first started, some theorize that ever since man began to domesticate animals, that they started to process their milk to make cheese. No one really knows how this came about, but it is likely to have been by accident after seeing milk left standing, thicken.

Cheese keeps you awake - right?

Does eating cheese at night give you nightmares? The myth says that it does, but this is just that, a myth. In fact cheese contains tryptophan which is an essential amino acid that has been demonstrated to reduce stress as well as induce sleep.

Cheese Fact Three:

The Romans had a specially named room for making cheese - it was called a "careale".

In choosing your cheese you should aim for a well-balanced mixture of texture and taste. Why not try one that is hard, one that is soft, a goats cheese and a blue cheese. Give the cheeses on your board a little bit of variety.

Always use a seperate knife to cut each cheese, otherwise you are likely to taint the flavours of each of the cheeses.

Making Cheese

Variations in the quality of cheese does occur. This is due to the differing chemical compositions of milk from different species. For example, Scott (1986), compiled a table that showed that cows milk contained 3.8% fat, whilst the milk of a goat contained 6% fat and the milk from sheep contained 9% fat.

Storage of Cheese

Fresh cheeses should be kept cold, in their original containers and eaten soon after purchase.

Avoid contaminating your cheese with other foods. Don't store cheeses with other strong smelling foods as cheese tends to absorb their aromas.

Keep cheeses covered - but take them out of their plastic wrapping as this suffocates the cheese. Don't let them dry out.

For firm cheeses consider using foil - wrapped tightly, they should keep for several weeks.

I like to let my cheese thaw for about 30 minutes before eating from the fridge.

    I learned a lot about cheeses. I think I need to elevate my taste beyond cheddar and Swiss. I'm missing out.

    Oh my goodness, I just learned that I have been suffocating my cheese by leaving the plastic wrap on! You are so right, cheese just tastes better if it sits out for about half an hour. Very well done!
