Celebrate National Cherry Pie Day
I'm not sure why February has become the month we in the U. S. celebrate the Cherry Pie. None of the popular cherry-growing states are producing crop this time of year. Even the cherry blossoms are quite a ways away from blooming. Not that cherry blossom pie would make much of a dessert.
In my research, I found some speculation that National Cherry Pie Day was selected for February so it could go hand-in-hand with President's Day and the whole George Washington "I cannot tell a lie"--cherry tree thing. That would, indeed, make the holiday helpful for teachers.
And the cynic in me says that perhaps some cherry processing, producing or product organization decided that February was a good time to move warehouse stock.
Then there's the theory that celebrating all things red should occur on the month of the Valentine.
I just don't know but I'll let you in on any research I do that shines some light on National Cherry Pie Day.

But I digress. Time to get back to the real point of this lens, Cherry Pie!
Northern Michigan Tart Cherry Pie

- Serves: 4
- Prep Time: 60 minutes
- Total Time: 1 hour 50 minutes
Here's the way I learned to cook cherry pie while growing up in the Cherry Capital of the World, Traverse City, Michigan. I doubt this recipe is all that different from other Cherry Pie recipes. I think the big trick is living in an area when the cherries go from picked to pie in under 12 hours. However, if I did not have access to fresh cherries, my next choice would be fresh frozen. Canned cherries just don't taste the same and canned cherry pie filling is even worse. Enjoy!
Ingredients
- Pastery for a double-crust pie (see below)
- One quart (4 cups) of fresh-picked tart red cherries
- 4 Tablespoons of instant tapioca
- 1 cup of sugar
- 1 pinch of salt
- 1/2 teaspoon of almond extract
- 1/2 teaspoon of vanilla extract
- 1 tablespoon of butter
Instructions
Pit your cherries
Roll out your bottom crust and place in your pie plate.
In a large mixing bowl combine tapioca, salt, sugar, cherries, and almond and vanilla extract.
Mix well and let it sit for 15-30 minutes.
Preheat your oven to 400 degrees F.
Roll out your top crust.
Fold your crust in half and cut slits in the middle of the folded edge.
Fold your crust in half again.
Turn your mixture into your pie plate.
Dot the top with butter.
Place top crust on one edge of pie and unfold to cover the entire pie.
Alternatively, you can cut the top crust into strips and create a simple basket weave top.
Flute crust edges.
Place your pie in the oven with foil or a pan on the rack below in case of drips.
Bake for 15 minutes
Turn oven temperature down to 350 F degree and bake an additional 35 minutes until pie is bubbling and crust is golden.
Cut your prep time in half!

My Mom's Pie Crust
- Serves: 3 Double-Crust Pies
- Prep Time: 20 minutes
- Total Time: 1 1/2 hours
Warning, warning! Mom uses lard or butter. And so do I.
This recipe makes enough for 3 double-crust pies. I make patties for each crust and freeze for later those I'm not using immediately.
Ingredients
- 6 cups of pastry flour
- 2 teaspoons of salt
- 1 lb of lard or butter
- 1 teaspoon of vinegar
- 1 egg lightly beaten
- cold water. I use iced water.
Instructions
1. Sift together the flour and salt.
2. Cut in lard or butter with a pastry cutter or 2 knives.
3. In a one-cup measure, combine vinegar, egg and enough iced water to equal 1 cup.
4. Gradually add this liquid to the lard and flour. Add only enough to make the dough cling together.
5. Chill 1 hour.
6. Cut into 6 pieces and form 6 patties.
7. Roll out one patty on a lightly floured surface and transfer to your pie plate.
8. Do the same for the top crust.
9. Wrap extra patties in waxed paper and freeze.

- I've never ad a cherry pie with your fresh picked tart cherries, just those canned ones, you definitely take a giant step up from that with your recipe. Mom used to make the lattice top with the crust, so you just brought back a sweet memory. I enjoyed your digression...a biographer tells the truth for George, funny!

- Love cherry pie, I make a mean No Bake Cherry Cheesecake using Comstock's cherry pie filling. I have a couple of lenses on those delicious pies, I doubt they hold a candle to you and your mom's homemade crusts though.
