My Final Fantasy Snow Chocobo!

I rolled a big huge snowball, egg-shaped, and set it on a wall. I built up the neck in a thick, solid trunk, squeezing it like a loaf of bread. smoothing it with my bare hands to melt and refreeze the crust as ice.

I rolled the head, added the beak separately, got it completely shaped (including the eyebrows and eyes). I put some very wet snow on top of the neck and made a slight socket, then gently stuck the head into it and packed the snow in tight around it.

I carved away the rest of the body from a much larger snowball, adding some wet snow to get the wing and tail.

I packed snow onto the brick wall to make the legs. Then add icicles for a crest, and-- ta-da!

It was about four feet tall. This only worked because it was cold Utah snow on a day that was just above freezing, so it was a little sticky.
