The darker the chocolate,the higher it's likely to be in flavonoids,according to a medical newsletter.A typical bar of dark chocolate contains an average of 53.5 milligrams of flavonoids.A milk chocolate bar contains less than 14 milligrams,while white chocolate doesn't have any, according to the report.But even if your chocolate is loaded with flavanols,it won't be a wonder drug.Most studies show only modest benefits from chocolate,and even though it's good for you,you still have to pay attention to calories and fat.

There are various types of chocolates like:-
Semi-sweet chocolate is the classic, dark, baking chocolate that one can buy in most stores. It is regularly used for, among other things, cakes, brownies and cookies. It may be used in lieu of sweet dark chocolate. It has a good, sweet flavor and contains up to 40-62% cocoa solids.

Chocolate Liquor - Produced by grinding the cocoa bean nib (center) to a smooth, liquid state. The chocolate liquor can then be cooled and molded into blocks also known as unsweetened baking chocolate. The liquor and blocks contain roughly 53 percent cocoa butter.

Semi-sweet (bittersweet) Chocolate - Chocolate liquor to which sweeteners and cocoa butter have been added. Also known as dark chocolate. It must contain at least 35 percent chocolate liquor. Its fat content averages 27 percent.

Milk Chocolate - Cocoa butter, milk, sweeteners and flavorings are added to chocolate liquor. Lends itself to good use for garnishes and candy coatings. All milk chocolate contains at least 10 percent chocolate liquor and 12 percent whole milk.

Sweet Chocolate - Contains more sweeteners than semi-sweet chocolate and at least 15 percent chocolate liquor. Sweet chocolate is used mostly for decorating and garnishing. The fat content is similar to semi-sweet.

Milk chocolate is chocolate liquor with extra cocoa butter, sugar, milk and vanilla added. This is the most popular form for chocolate. It is primarily an eating chocolate. Remember, contains lactose from the milk.

I have tried different recipes over the years, and I always throw something new into the mix, but I finally found a combination that they love and request for each outing.

The chocolate chip cookies are more than just good tasting. They do have the oatmeal and nuts in them for additional fiber in the diet and the peanut butter and chocolate chips provide energy. I have done some experimenting with the ingredients for the chocolate chip cookies regarding using shortening, oil or butter. I have found that the oil produces a harder crunchy cookie, the butter cookies are very soft the blend of half butter and half solid shortening produces a cookie that packs well and remains soft. I have also experimented with the oatmeal. I use quick cooking oatmeal in which I process half of the amount used in the chocolate chip cookies in the food processor so that it has a finer texture. This helps the cookies to be moister. The addition of the shelled sunflower seeds adds a saltiness that goes well with the sweetness of the chocolate.

Several times a year I make huge batches of the chocolate chip cookies I bake some of them and freeze the rest of the dough in an ice cream pail. This way there are fresh cookies readily available for the planned or impromptu fishing trip. I am proud that I have added a special touch to the family traditions. My husband always starts talking about fishing stories when he smells chili simmering or the cookies baking.

Chocolates 

After fermentation, the beans are dried, cleaned, and roasted, and the shell is removed to produce cacao nibs. The nibs are then ground and liquified, resulting in pure chocolate in fluid form: chocolate liquor. The liquor can be further processed into two components: cocoa solids and cocoa butter. Pure, unsweetened chocolate contains primarily cocoa solids and cocoa butter in varying proportions. Much of the chocolate consumed today is in the form of sweet chocolate, combining chocolate with sugar. Milk chocolate is sweet chocolate that additionally contains milk powder or condensed milk. "White chocolate" contains cocoa butter, sugar, and milk but no cocoa solids (and thus does not qualify to be considered true chocolate).

Chocolate contains alkaloids such as theobromine and phenethylamine, which have physiological effects on the body. It has been linked to serotonin levels in the brain. Scientists claim that chocolate, eaten in moderation, can lower blood pressure. Dark chocolate has recently been promoted for its health benefits, including a substantial amount of antioxidants that reduce the formation of free radicals, though the presence of theobromine renders it toxic to some animals, such as dogs and cats.

Chocolate has become one of the most popular flavors in the world. Gifts of chocolate molded into different shapes have become traditional on certain holidays: chocolate bunnies and eggs are popular on Easter, chocolate coins on Hanukkah, Santa Claus and other holiday symbols on Christmas, and hearts on Valentine's Day. Chocolate is also used in cold and hot beverages, to produce chocolate milk and hot chocolate.

What really gets the goat of discerning internet users is when someone or some company unilaterally decides he or she or it or they is or are the best and advertises that way. Do you bite like a hungry fish when the research company says they are reputedly the best of its type? When you see "world's finest chocolate," do you say, "well, then, I will only buy from them from now on"?

consumers decide what is the world's finest chocolate .I would like to add my reports of that company that calls itself World's Finest Chocolate.

I am, like many of you, a chocolate fiend. I know some about the chemical cause and effect (in the hypothalamus and pituitary gland, chocolate acts on the dopamine and serotonin levels and all that); I live on chocolate as a staple; I have sold chocolate for fundraisers at the school where I worked; I have made my own hand rolled and triple-dipped chocolates; etc. etc.. I know what works for me and the people around me, that is.

I also worked-during those gruesome grad school days-for an incentive sales company, which supplied the incentive prizes and products for local businesses and fundraising product companies, and also provided all the newspaper supplies (newspaper boxes, rubber bands, bags, etc.) to every paper in the United States. One of the fundraising product customers at the company was World's Finest Chocolate.

THE CLASSIC DESSERT COLLECTION OF COOKING RECIPES!

Yeah, right, I thought, the first day I filled an order. Then I met the CEO, who was one of the classiest, prettiest, and most generous women I have yet to meet. After each interaction or exchange with our company, she would leave "samples", enough for the whole company. That chocolate was coveted, salivated over, and much anticipated. That chocolate did in fact live up to its name: it was [some of] the world's finest chocolate we ever enjoyed. And we have the famous See's Candy here .

So now I have to take back my complaint that every company that claims it is the best . Not every company, just those who haven't yet proven themselves. In other words, when they had been online for two months, they were saying they were, sadly, the best of a rare breed of companies.

What's the problem with chocolates?

Most people have heard that chocolate is good for you ,but a medical journal is bursting the chocolate bubble.The editor point out that the very thing that makes chocolate good for you-the antioxidants called flavanols- also make chocolate taste bitter.As a result, confectionery makers often take out the flavanols,stripping the chocolate of its main health -promoting properties.Labels usually don't tell you whether your chocolate comes with or without flavanols.
