Heavenly Fish Stew Recipes

To a real fish lover, the idea of a good fish stew is heaven, all the flavour of the sea in a bowl. Here are the best fish stew recipes I've found on the web.

When most people think about fish stew, the classic French dish, Bouillabaisse, comes to mind. There's a really good recipe for this here and I've assembled a fair few others, mainly with a European theme, but also inspired by Moroccan and Brazilian styles. These are all links to recipes you can find on the web. I don't really write recipes myself. I prefer to leave that to the professional chefs and food writers.

Thanks to chefs like Jamie Oliver, Antony Worrall Thompson, the Hairy Bikers and more, here's a collection of recipes that should inspire you to prepare a great fish stew. I've enjoyed all these Fish Stew recipes, and I hope you do too.

Stewed Fish?

The very term, fish stew, is a bit misleading. Most varieties of fish don't lend themselves well to a long, slow cooking process. Instead, the technique is normally to prepare a wonderful stock or broth to which the fish is added later, and cooked for quite a short time. In the case of Bouillabaisse, the fish is sometimes then separated from the 'soup' before serving. Nonetheless, we still use the term 'fish stew,' but it's not a dish you can leave to simmer for hours like a meat stew.

This recipe comes from Jamie Oliver's cookbook, Cook with Jamie: My Guide to Making You a Better Cook.

A couple of people asked me for a Jamie Oliver recipe for Bouillabaisse and I wasn't aware there was one on the web, so I had a look and found this. It isn't called Bouillabaisse but it's certainly as close to it as some I've seen that do claim that title. It has Mussels and Clams, Sea Bass or Bream, Red Mullet or Snapper, Langoustines or Tiger Prawns and Monkfish. It's also served with saffron aïoli. So, if you want to call it Bouillabaisse in the privacy of your own home, you can.

Why do Jamie's recipes always turn out well? The instructions are great. They're actually fun to read too. He always gives you a bit of his opinion and this time it's the merits of using real saffron. If you're one of those people looking for a Bouillabaisse recipe by Jamie Oliver, try this one.

It's been around for a few years now but that doesn't make it out of date at all. The US version of Jamie's 30-minute meals recipe book has a slightly different title. Nonetheless, I understand it has all the same to offer.

Bouillabaisse

This, in contrast to the last recipe, is one that does actually claim the title of Bouillabaisse.

I've seen one or two recipes for Bouillabaisse from restaurants in the port of Marseilles in southern France. These have traditional family associations and are passed from generation to generation. Some of the ingredients are fairly hard to get hold of for the average person. Things like Scorpion Fish and Sea Urchin just aren't available to most people I know. This recipe uses Red Mullet, Sea Bass, Monkfish and Tiger Prawns. These are quite expensive ingredients, and you'll need a good fishmonger or an excellent supermarket to supply them to you, but they're not impossible to get hold of. Likewise, the recipe is challenging enough but quite achievable. I like Antony Worrall Thompson's recipes, they strip away much of the fuss and still deliver a good result. I've recommended this recipe elsewhere and that's a measure of how good it is.

Caldeirada (Portuguese Monster Fish Stew)

This recipe uses oily and non-oily fish in equal measures. For the oily fish, you could use Mackerel, Swordfish or Tuna. For the non-oily fish you could use Sea Bass or Morkfish, or a less expensive white fish like Hake. You'll also need some Squid, Shellfish (Clams or Cockles) and Mussels.

Good Portuguese food is, in my opinion, underrated. I've spent quite a bit of time in Portugal and I've eaten pretty well there. The food tends to be quite unpretentious, and they do love their oily fish. This is a fine example of both of those merits and the Hairy Bikers, with their fun and relaxed approach, do justice to this dish. Of course, oily fish is a good source of Omega 3, so there's an added health benefit in there too.

Why is it called 'monster fish stew?' I can't honestly say I know. If you make the full amount, it's quite a feast, even for 8 people. That could be why.

One-pan Spanish Fish Stew

This is a very simple fish stew recipe, and one you could quite easily have as a fairly quick mid week supper. It also happens to quite affordable, except perhaps for the 200g of raw King Prawns, but that really is the most extravagant ingredient.

You just need any firm white fish to make this one-pan Spanish fish stew, and you can use Salmon too. Something like Pollock, or any other sustainable fish should be fine. I know I use the term 'sustainable fish' quite a lot, but it's not the fish that's sustainable. It's using a wider variety of fish that makes fish consumption more sustainable. So, don't be afraid to try different types, especially in a dish like this.

This is quite a spicy dish, with paprika and cayenne pepper. It's also quite hearty with potatoes and chick peas to fill you up. This makes a pretty good family dinner as long everyone's happy with the pepper. You can moderate the cayenne if you like, but it really does benefit from having a bit of a spicy kick.

Catalan Fish Stew

This is a slightly surprising recipe inasmuch as I found it under 'Gardening' on the Daily Telegraph website. This isn't the most obvious place to go looking for a fish stew recipe, but that's where it was. I suppose the logic is that Tony Trenerry is the chef at the Eden Project in England.

There's lovely depth of flavour in this dish, with chilli heat, fennel seed, turmeric, fresh herbs and toasted almonds. It only requires one kind of firm white fish and you can decide on that, so that makes the shopping a bit easier. I must admit, I'm not actually familiar with Tony Trenerry's work but, on the strength of this recipe, he's got a good sense for flavours. I'll look out for more recipes by him in future.

Moroccan Fish Stew

This recipe is beautifully spiced with ginger, cumin, turmeric, cinnamon and cayenne pepper. It also uses chick peas, honey and flaked almonds. These North African flavours are heaven, but I wasn't sure about the idea of honey with fish. I'm still not, but in this dish it works well.

The fish itself is any firm white fish, Cod, Snapper or Ling.

Brazilian Fish Stew

I used Tilapia, but you could use Cod, Haddock or Halibut. This recipe has a great quality that reflects its South American heritage with fresh ginger, coconut milk and palm hearts.

I'm not a connoisseur of Brazilian food, but I took my time to read the instructions well and it turned out very nicely. I will definitely be making this again. Perhaps I should make a trip to Rio and try it in its native setting. Sounds like a good excuse.

  • I tried the Caldeirada when I was in Brazil (plenty Portuguese dishes available of course). It was great. I lived in the south of Brazil - quite some way from the coast. There weren't that many seafood restaurants, but those that existed were mainly serving Portuguese dishes - and they were very good.
