How Fish Fingers Changed the World

Frozen Food and How it all began

Whilst visiting Labrador in Canada, Brooklyn born Taxidermist Clarence Birdseye made an observation which went on to change the way we live today. Having watched local fishermen placing their catch directly onto surface ice, he realised that keeping food below freezing would keep it fresh. Also he discovered that freezing the fish swiftly resulted in it maintaining its flavour and also stopped it developing ice crystals.

Once he returned home Clarence invested the sum of $7 in an electric fan, brine and ice and started developing his freezing method. Having completed his initial research and development the "Quick Freeze Double-Plate Machine" was patented.

Using the technology he created, Clarence set about producing frozen food. He found that fish would freeze more quickly if it was cut into thin slabs, and created the fish finger.
