Five simple chicken recipes

I hate cooking more than anything during the summer time. The weather is hot and when you cook; the stove causes additional heat. Yuck! So what I have done is created a way to take care of a few problems with one handy trick. Bulk cooking my chicken!!

From my other lens, I am sure by now the message of me being pretty frugal is nothing new. I watch for sales very closely at our local grocery store. Here in the south we have a store called Ingles, and by me watching their sales, I pretty much have a grasp of the schedule they use for certain sale items such as chicken. I am SO particular about my chicken; I only eat boneless, skinless chicken breast that has not been fed hormones. Tyson is the brand I usually get and when it is on sale, I can spend ten dollars and get five meals from that batch of chicken.

So, what I am going to do is list five recipes we eat regularly and how I make cooking dinner fast and easy without adding additional heat to my home and most important the meals are pretty nutritional. The only sodium you will find in my meals is the hidden sodium in foods, but even that is monitored pretty closely.

Cooking the Chicken

Let's start with Cooking the Chicken

As I mentioned in the opening, when Ingles has boneless, skinless chicken breast on sale, I usually purchase a few packages (2 at a time) and make another trip to the store before the sale is over and purchase a couple more packs.

I have one of those oval shaped crock pots where the container lifts out. I will add a cup or so of apple juice and ½ cup of apple cider vinegar to the crock pot-sometimes I will add a little honey for extra flavor.

Next I wash and trim off any fat from the chicken breast place in the crock pot. I turn the pot on high and cook three hours, than turn it on low and cook additional 1 ½ to 2 hours longer. By cooking the chicken like this, the vinegar breaks down the fibers in the meat.

I purchase small oval shaped Zip Lock containers which are reusable and freeze wonderfully! I place two chicken breast in each container; let them cool and BAM you have five instant ingredients for meals! So here are five recipes that are fast (because your chicken is already done) easy to make and nutritional!

My Spanish Rice

Chicken Spanish Rice

1-container of chicken breast that you cooked and froze
2-cups of cooked brown rice
1-cup of frozen peas (that have been thawed)
½ cup of organic crushed tomatoes
Parsley
Mrs. Dash Zesty Seasoning
Onion powder
Chili powder
Fresh Basil cut in thin strips.

To thaw your chicken boil for about 5 minutes, drain and cut into one inch cubes. Cook and drain your brown rice and add the chicken. I use organic can green peas at the moment because I did not want to waste them (even some organic foods have a high sodium content ½ cup of peas has 340 mg. of sodium) if you are using frozen green peas that is much better! Thaw them and add to the mixture. Start with a ½ cup of the crush tomatoes and see if that is enough tomato for you if not add a little more. Add a little hot water just to make sure it has enough liquid and add all of your seasonings, except for the fresh basil. Simmer on low until it is warm and all of the spices have had a chance to release their flavors. After it is done, sprinkle the top with fresh basil strips and enjoy!

Chicken and Mushroom Salad

I am so addicted to this recipe. I love to have this salad in one of my flat breads, it is so yummy :0)

Chicken and Mushroom Salad

1-container of chicken that you froze
1-cup of diced portabella mushrooms
2-Tablespoons Peppercorn Ranch dressing
(use to your preference but remember the sodium content)
½ oz. of shredded Swiss Cheese (you can add one full oz. if you choose)
I add additional pepper

Mix everything together and either eat by itself with a side of red grapes or add to a flat bread. See recipe at: How To Use One Recipe for Biscuits and Flat Bread

Parmesan Chicken Breast

Parmesan Chicken Breast

1-container of your frozen chicken breast
1-cup of crushed organic tomatoes
Parsley
Oregano
Dash of red pepper
Black pepper
Garlic powder (not garlic salt)
Mozzarella Cheese

I have these little oval oven proof dishes that I found on a great sale. I lightly spray two of them with a non-stick cooking spray, set a chicken breast in each dish. In a separate bowl; mix together your crushed organic tomatoes and spices. (I am sorry I do not have measurements for the spices, I just add them.) Add about half of cup of seasoned tomatoes to each chicken breast and top with the mozzarella cheese. Place in your toaster oven on 425 for about 10-15 minutes-when your cheese is melted and golden brown.

For whatever reason when I have this chicken, I always serve it with these really easy spiced potatoes I cook.

Take 3-4 medium size potatoes and cube them into a one inch cubes and boil for about 11 minutes. Leave the skin on them so try and make sure you use either a thin skinned red potato or Yukon gold's. Place about 2 tablespoons of olive oil in a fry pan and add your drained cooked potatoes. Do not disturb them and let them start to brown. Before turning them, add Mrs. Dash zesty spic mix, black pepper and parsley. Finish cooking and enjoy :0)

Chicken Black Bean Chili

Okay, honestly I came up with this recipe by accident. I was trying to use up some leftovers in my refrigerator and came up with this, which is really tasty. I cannot wait to make it in the Fall.

Chicken Black Bean Chili

1-container of your frozen chicken (thawed and cubed)
1-can organic black beans (rinsed very good)
1-can crushed organic roasted tomatoes
Spices of your choice!
I use
Mrs. Dash Zesty Spice
Black Pepper
Chili Pepper
Onion Powder
2-tablespoons of unsalted butter

Mix everything together in a pot, simmer and enjoy! The reason why I use a lot of organic black beans is because 1. I found them on sale 2. They are lower in sodium than other can beans. I add the 2 tablespoons (actually 2 slices of butter for a little extra richness)

Chicken Grape Salad

This is one of my husband's favorite recipes. This is also a great summer dinner that is easy to make, very healthy and there is always leftovers. I usually serve a cheese biscuit with it.

Chicken Grape Salad

1 ½ sections of Romaine Lettuce
Sliced cucumbers
Sliced portabella mushrooms
1-container of your frozen chicken breast (thawed and cubed)
A hand full of red grapes sliced in half
1 oz. Shredded Swiss Cheese
A few pecans crumbled on top

Layer your salad however you like it, and dress it with a Poppy Seed Dressing. The poppy seed dressing just enhances all of the flavors of the ingredients. However, if you are watching your sodium - 2 Tablespoons of Poppy Seed Dressing has 360 mg. of sodium. So in my case I no longer eat poppy seed dressing but eat a little low-fat ranch on it.

The Conclusion

Out of two packs of chicken that you purchased on sale, you got five dinners for two people. The recipes are simple, easy to make and it keeps the heat down in the kitchen.

Now the best part of this is: If you spent $10 for two packs of chicken (which is possible when they are on sale) you have just spent $2.00 for two of you to have a main course. Not bad is it?
