Easy Dessert 

Strawberry Sundae

Strawberry Sundae
This recipe serves: 2

1 1/2 cups strawberries, washed, hulled and sliced
1/4 cup sugar, or to taste
4 scoops vanilla non-fat frozen yogurt
2 teaspoons walnuts, chopped
2 teaspoons semisweet chocolate shavings or sprinkles

1. In a small bowl, sprinkle the sliced strawberries with sugar.
2. Puree half of the strawberries in a food prcessor to make a strawberry sauce. Reserve the sauce and the remaining sliced strawberries in the refrigerator until ready to use.

3. Pour a few teaspoons of strawberry sauce into the bottom of each sundae glass. Add a scoop of frozen yogurt to each and drizzle with more strawberry sauce. Add another scoop of frozen yogurt and top with the remaining sauce and sliced strawberries.

4. Decorate each sundae with nuts and chocolate shavings.

Serving Size: 1 sundae

A Vegetarian Quik Dish 

Hearty Pasta & Pink Beans (serves 6)

Use hearty pasta from the frozen foods section for this filling dish. All you need to complete this meal is a bountiful tossed salad and some fresh bread.
16-ounce bag frozen tortellini (ricotta, tofu, or vegetable-filled), ravioli, ricotta cavatelli, or gnocchi
Two 16-ounce cans pink beans, drained and rinsed
28-ounce jar good-quality chunky marinara sauce
Bring water to a boil in a large pot and cook the frozen pasta according to package directions. Just before draining, add the beans to the water and cook briefly to heat them. Drain the mixture well and transfer to a serving container.

Stir in the marinara sauce and serve at once.

Tator Tot Casserole 

Kid's Love this one!

Ingredients:
1 lb. hamburger
1 can mixed vegetables, such as VegAll
1 can cream of mushroom soup
1/2 package Frozen Tator Tots

Brown hamburger over medium skillet, salt, pepper to taste. Stir in the vegetables, mix then add the soup, stir in. Put in small baking pan or 1 quart casserole dish, top with tator tots.
Bake at 350 degrees for 1/2 an hour. Serve.

Mommie, can I help? 

Of course it would be faster and easier to clean up if the answer was NO when your child asks this question. Try letting them help and see what happens. Kids will usually eat what they helped cook and that could lead to good eating habits. Even the little ones can set the table or wash veggies. It's also an opportunity to get them out from in front of the T.V. and to spend quality time together. Try it! It could be rewarding for you as well as them.
