Florentine Cookies for the Holidays
The Florentines Cookies recipe featured here comes from a page clipped out of a vintage magazine. You know, the ones that were printed on the rough paper that always had the best recipes. Of course I've put my own spin on the recipe but I'd like to issue a big thank you to whomever it was that published the original recipe years ago. Christmas wouldn't be the same without them!

Florentines Cookie Recipe
Festive Italian Lace Christmas Cookies

- Serves: About 4 Dozen Cookies
- Prep Time: 20 minutes
- Total Time: Additional 10 minutes per batch
Delicious lacy Florentines cookies. Your friends will think they came from the bakery!
Ingredients
- 1/2 cup all-purpose flour (sifted)
- 1/4 teaspoon baking soda
- Dash of salt
- 1/2 stick of butter
- 1/3 cup brown sugar (firmly packed)
- 2 tablespoons light corn syrup
- 1 egg (beaten)
- 1/2 cup flaked coconut
- 1/2 teaspoon vanilla extract
- 2 one-ounce squares semi-sweet chocolate (for glaze)
- 1 additional tablespoon butter (for glaze)
Instructions
Preheat oven to 350 degrees farenheit.
Use baking spray on two cookie baking sheets.
In a small bowl, mix flour, baking soda and salt.
In a medium sized bowl, cream butter and sugar until smooth and fluffy. Add corn syrup and egg. Mix well.
Stir in the flour mixture, coconut and vanilla.
Drop batter by half teaspoonfuls approximately 2 inches apart on baking sheets.
Bake one pan at a time for about 10 minutes until firm.
Remove from the oven and let cool one minute before moving the cookies to a wire rack to cool.
Optional: While the first batch is baking prepare the chocolate glaze by melting chocolate and 1 tablespoon of butter in a small saucepan, stirring constantly.
Drizzle a small amount of the chocolate glaze over the baked cookies in a lacy pattern.
Let chocolate harden about 30 minutes before moving, or serving the Florentines.
