Florida Pompano Information

Florida Pompano range from Massachusetts to the Gulf of Mexico as well as in parts of South America. Florida Pompano are schooling fish that are often found in the surf.

Pompano average 1-2 lbs and are highly regarded as a food fish. Florida pompano are said to bring the highest price per pound of any fish in the United States.

How to Catch Pompano

They are often caught very close to the beach, either in the surf or around structure such as pilings, fishing piers, jetties, rocky bottoms and other areas. Anglers fish with small leaders and hooks on light tackle rods. Favorite baits for pompano include mole crabs, small crabs and shrimp.

In many areas anglers can just watch in the surf and scoop up mole crabs by hand or with a small mesh lined rake. These mole crabs are the natural prey of pompano and other species of fish that feed behind the surf line. Pompano are schooling fish, and if you catch one, more may be nearby.

Pompano move with the tide, foraging along the bottom just behind or in the break of the surf. These fish can sometimes be seen right in the wave before it breaks.

Florida Pompano Recipes

Basic Baked Pompano

Ingredients

pompano fillets; 6-8 oz. each
1 tbsp butter or olive oil
lemon
salt and pepper to taste

Directions

Preheat the oven to 400 F. Rub the fish with oil and season with salt and pepper.

Bake in a shallow pan 25 minutes or until flaky.

Squeeze lemon over fillets.

Lemon Herb Baked Pompano

Ingredients

(4) 6-ounce pompano fillets
2 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon fresh basil
1 teaspoon fresh rosemary
1 teaspoon fresh thyme
1/2 medium onion, sliced
1/2 cup red bell pepper, diced
1 lemon, sliced
1/2 cup dry white wine
2 tablespoons parsley
salt and pepper to taste

Directions

Preheat oven to 350° F.

Chop herbs. Mix all herbs together EXCEPT parsley.

Place fillets in a single layer in a greased baking dish.

Drizzle olive oil and lemon juice over fillets.

Season the fillets with basil, rosemary, thyme, onion, diced red pepper, salt and pepper; top with lemon slices and pour wine over all.

Bake for 25-30 minutes or until fish flakes easily with a fork.

Sprinkle with chopped parsley and serve.

Pan Fried Pompano

Ingredients

1 lbs Florida Pompano fillets
2 eggs
1/4 cup milk
1 cup seafood breader mix
oil for frying (olive, peanut, vegetable or sunflower oil)

Directions:

1. Rinse fillets and pat dry with paper towel.

2. In a bowl, combine eggs and milk, whisk well. Place breader mix in freezer bag.

3. Dip fish in milk egg mixture and drop in bag containing breader mix, shake well.

4. Carefully place fillets in skillet once oil is hot. Cook fillets until golden brown.
