METHOD

Chop the onion and garlic and sauté until soft. Combine the olive oil, crushed ginger, cumin, coriander, cinnamon and mustard and add to saucepan.

Add a pinch of salt and black pepper to taste. Stir for one minute.

Cut the squash into small cubes, dice the potaoto and cut the apple into quarters. Add to the pan and stir coating with the spice and onion mixture. Add the stock and simmer for about 20 minutes.

Pour into a blender and blend for a few seconds until smooth. Return to the pan and stir in lemon juice and a tablespoon of half fat creme freche if desired.

Serve immediately with crusty bread. This recipe should serve 2 people.
