What does make a food service business distinctive from many other sectors of industry is the short time in which key steps in the chain take place.

Usually, small businesses don't talk about "operations management", but they carry out the activities that management schools typically associate with the phrase "operations management."

Foodservice business is no different from most other business operations. It should be seen as a cycle or chain of events, each inter-related: beginning with a planning and organising stage, leading to a production stage, then a delivery or service stage ending with activities, such as receiving payment and/or stock control, which have taken place.

On completion of this cycle there might then be an evaluation or review stage, at which corrective action might be considered if necessary.

The complete cycle is therefore a sequence of key steps through which the business progresses.

These key steps are:

1. Identifying the needs of the customer
2. Planning the menu together with equipment consideration
3. Purchasing
4. Receiving
5. Storage
6. Issuing
7. Production
8. Display and selling
9. Revenue collection

What does make a foodservice business distinctive from many other sectors of industry is the short time in which these key steps in the chain take place; in many cases they take place on a daily basis all under one roof. In order to have a broad understanding of a foodservice operation it is essential to follow through this sequence of key steps.
