Seven Tips to Cook Like a Chef 

1 Peel garlic easily. Peeling garlic can be frustrating unless you know this little tip that the pros use. Lay a clove flat on a hard surface and then pressing down hard on it with the flat side of a large knife. Once you've pressed hard enough you'll hear a "pop" that tells you the peel has separated. Even with this trick your fingers will undoubtedly smell like garlic. Get rid of that odor by washing them well with salt.

2. Repair cracked eggs. If you have an egg that cracks while boiling, just add a capful of vinegar to the water and watch as the eggshell seals itself. Unfortunately though, if the whites have begun to ooze out this trick won't work.

3. Make sure the oil is hot before frying foods. Although they're not the healthiest option, fried foods sure do taste good. The key to perfect frying is to get the oil hot before you put the food in. (Not so hot that it is smoking though - be careful!) If you don't get the oil hot, your food will absorb too much oil and taste greasy. To test whether the oil is hot enough for frying, throw in a drop of water or even a small piece of what you're cooking. If it bubbles rapidly then you know it's ready.

4. Get the right temperature for deep frying. Does your oil always seem to be the wrong temperature? A simple way to find out if your oil is hot enough is to use a bread cube. If the bread browns in a minute, the oil is between 350 and 365 degrees, 40 seconds - 365 and 382 degrees, 20 seconds - 382 and 390 degrees. Or, if you have one, you can use a thermometer. Just be sure that it is a metal thermometer designed for deep fryers.

5. A substitution for eggs. Need an egg for a recipe but you're all out? You can substitute two tablespoons of real mayonnaise for a large egg in any recipe. Be sure not to use whipped salad dressing though unless you want the extra salt that it contains.

6. Interesting uses for apples. You may have heard before that it's best to keep apples stored separately from other fruits and vegetables because they give off gases that speed up ripening. Well those same gases are actually useful for some things. An apple wedge in the bag will soften clumped brown sugar over night. It will also keep your potatoes from sprouting.

7. Remove the fat from soups. Remove the fat from homemade soups by tossing in four ice cubes. The fat will congeal around the ice, which can then be removed. This will cool the soup, so you may need to reheat after completing the process.

Cooking like a chef does not require years of professional training. Try out the tips above to get started, and you will quickly realize that you too can prepare fantastic food that looks and tastes better than you could ever expect.

Spinach Calzone

Pizza dough (store bought or homemade)
2 packages frozen spinach, steamed, drained and cooled
1 medium onion, sliced thin
1 (4 ounce) package feta cheese, crumbled
1 cup pizza cheese

Follow directions for pizza crust as if making pizza. When crust is ready - spread spinach over 1/2 of crust then sprinkle feta, onions and pizza cheese over spinach. Fold crust over spinach and seal edges. Bake at 425 degrees F for about 15 minutes or until crust is golden.

I used a homemade crust I will post separately and I use a small size cookie sheet with sides as my pizza pan. You can also make this with a pizza sauce on the crust before the spinach but I prefer it without. Enjoy!!!

Steak and Mushroom Sandwiches

Makes 6 servings.

1 pound flank or sirloin steak
2 tablespoons vegetable oil
1 medium onion, sliced
2 medium portobello mushrooms, trimmed and sliced thin
1 teaspoon salt
1 teaspoon dried oregano
6 long sandwich buns (about 6 inches)
4 to 8 ounces mozzarella or other cheese, sliced
Pickled jalapeño slices or spicy pickled okra (optional)

Put the steak in the freezer for 30 minutes to make it easier to slice.

Heat vegetable oil in a wide skillet over medium-high heat. Add the onion and cook, stirring occasionally, until limp and well-browned. This might take 20 minutes.

Meanwhile, slice steak as thinly as you can against the grain. (The grain on flank steak is easy to see - it's the long, striated indentations.) If you end up shaving some of the meat rather than actually slicing it, that's fine. When the onions are brown, increase heat to high and add mushrooms, salt and oregano. Cook, stirring, 6 minutes, until mushrooms are limp and dark.

Add beef and stir quickly and constantly until it's no longer pink.

Divide mixture among buns and top with sliced cheese.

Serve with pickled jalapeño peppers or okra, if desired. Serve with a salad of chopped tomatoes and cucumber.

Ok, To tell the truth I hate pudding. But If you like pudding then here ya go.

PEACH PUDDING
In a large mixing bowl whip to a cream two eggs, three tablespoons of
sugar, and two tablespoons of butter. To this, after it is well beaten,
add a saltspoon of salt and half a grated nutmeg. Stir these ingredients
well into the mixture; then stir in a cup of milk. Last add, a little at
a time--stirring it well in to make a smooth batter--a cup and a half of
flour and three-quarters of a cup of Indian meal, which have been sifted
together with three teaspoons of baking-powder in another bowl.
Butter well the inside of a two-quart pudding mold; put a layer of the
pudding batter an inch deep in the mold; cover this with a layer of fine
ripe peaches that have been peeled and cut in quarters or eighths--this
depends upon the size of the peaches. Sprinkle the layer of peaches with
a light layer of sugar; then pour in a layer of batter; then a layer of
peaches. Repeat this process till all the material is in, leaving a
layer of batter on top. Steam for two hours.

2 tb Instant coffee
1 ts Vanilla
2 tb Brown sugar
1 ts Water
1 ½ c Boiling water
½ c Whipping cream, whipped
How To:
Divide instant coffee and vanilla evenly between two Spanish coffee glasses. In a small
heavy saucepan, dissolve sugar in the teaspoon of water. Over medium heat, stir dissolved
sugar until it reaches a full boil. Immediately remove from heat and stir in boiling water.
Divide sugar mixture between coffee glasses and top with a dollop of whipped cream.
Makes 2 x 6 oz servings.
