Uncooked or minimally cooked (less than 5 minutes) jams are called freezer jam. They are stored frozen, making it popular for their very fresh taste.

The ingredients for freezer jam are few, but it's important you follow the recipe exactly if you want reliable, safe, and delicious results.

Blueberry Freezer Jam

 Blueberry Freezer Jam




  3 c. crushed blueberries
  (rinsed and crushed)
  5 1/4 c. sugar


1 tbsp. lemon juice
1 box Sure-Jell Fruit Pectin
 





  Measure fruit and sugar into a large bowl. Mix well. Let set 10 minutes.
  Combine 3/4 cup water and Sure-Jell into small pan.
  Boil for 1 minute, stirring constantly.
  Add to fruit mixture and stir for approximately 3 minutes.
  Put into jars or plastic containers. Cover.
  Let set at room temperature for 24 hours, then freeze.





Mixed Berry Freezer Jam

  2 c. crushed rasperberries
  5 c. sugar

1.75 oz Fruit Pectin
 





  Measure fruit and sugar into a large bowl. Mix well. Let set 10 minutes.
  Combine 3/4 cup water and Sure-Jell into small pan.
  Boil for 1 minute, stirring constantly.
  Add to fruit mixture and stir for approximately 3 minutes.
  Put into jars or plastic containers. Cover.
  Let set at room temperature for 24 hours, then freeze.

Pectin is used in food as a gelling agent particularly in jams and jellies. It is also used in fillings, sweets, as a stabilizer in fruit juices and milk drinks and as a source of dietary fiber.

How To Store Freezer Jam

You should use either sturdy plastic containers with tight-fitting lids, or short, wide-mouthed glass jars made especially for the freezer. It's best to choose containers that are no bigger than pint-size; the jam will not set up as well in larger containers.

Freezer jam is meant to be stored in the freezer, and can be stored for up to a year. In the refrigerator, it can be stored for up to three weeks.

Once you open a container of jam, you should use it within three weeks.

For making Freezer Jam


If your jam is runny, pour it into a saucepan and bring it to a boil. It will get thicker as it cools, and you can re-bottle as you did before.



Don't double the recipe - it may interfere with the setting process

    I'd never heard of this either, but it sure is nice for people like me who really don't like the whole canning process. (My husband used to do all of that when we lived on the farm.)
