French toast (often known as eggy bread in parts of the United Kingdom, pain perdu in France, pain doré in French-speaking parts of Canada, torrijas in Spain, and rabanada in Brazil) is a popular breakfast food in North America, Europe, Bermuda and Brazil. Typical French toast is made with bread and eggs. Milk is commonly added. According to what is popular in local cuisine, many of the spices that are added to bread or egg dishes are included in cooking. This versatile dish is often topped with sugar, butter, fruit, syrup, or other items.

syrup of choice

Beat eggs and milk together. Let bread soak in mixture for a few seconds. Fry over medium heat. serve with syrup! Delicious!

Basic French Toast Recipe -- Fromn Mr Breakfast

Basic French Toast

* 10 to 12 slices white bread - preferably day-old (absorbs more egg mixture)
* 1 cup milk
* 4 large eggs
* 1 teaspoon sugar - optional
* 1 teaspoon salt
* butter - for frying
* maple syrup or other syrup

Break eggs into a wide, shallow bowl or pie plate; beat lightly with a fork. Stir in sugar, salt, and milk.

Over medium-low heat, heat griddle or skillet coated with a thin layer of butter or margarine.

Place the bread slices, one at a time, into the bowl or plate, letting slices soak up egg mixture for a few seconds, then carefully turn to coat the other side. Soak/coat only as many slices as you will be cooking at one time.

Transfer bread slices to griddle or skillet, heating slowly until bottom is golden brown. Turn and brown the other side. Serve French toast hot with butter and syrup.

Batter:
2 eggs
1 cup milk
1/2 cup sugar
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract

Filling:
1 1/2 cups cream cheese
1/4 cup dark chocolate chips
1/2 cup medium-diced banana
1/8 cup orange juice
1/4 cup sugar
1 teaspoon pure vanilla extract

Syrup:
1 cup sugar
1 cup water
3 cinnamon sticks

Butter, as needed
4 (2-inch thick) pieces challah bread
Vanilla ice cream, for serving, optional
Fresh berries, for serving, optional

Batter:
Combine all ingredients in a large bowl, mixing well until incorporated. Keep refrigerated until ready to use.

Filling:
Fold all ingredients together in a bowl until well incorporated but not completely smooth.

Syrup:
Combine all ingredients in a saucepan over medium-high heat. Stir until sugar dissolves. Bring to a boil and let reduce by 1/3.

French Toast:
Preheat oven to 350 degrees F.

Heat a large saute pan and then add butter. Dredge the bread in the batter and place in the pan. Cook until golden brown on both sides, approximately 2 minutes. Remove from pan and let cool. Divide filling between 2 pieces of the bread top with the remaining 2 pieces of bread. Transfer French toast to oven and bake for 8 minutes.

Cut each French toast in half and serve with the cinnamon syrup and, if desired, a large scoop of vanilla ice cream and fresh berries.

Cook Time: 20 minutes
Ingredients:

* 1 Large Ripe Peach, peeled and pit removed
* 1 Pint Strawberries, stem removed and diced small
* 4 Ounces Cream Cheese, soft
* 1 Tablespoon Sugar
* 1 Tablespoon Grand Marnier (Optional)
* 1 Loaf of Brioche, Challah, or White Bread, unsliced
* 3 Large Eggs
* 1 1/4 Cups Milk
* 1 Tablespoon Sugar
* 1 Teaspoon Vanilla
* 1/4 Teaspoon Cinnamon
* Butter and Vegetable Oil for frying
* Maple Syrup

Preparation:
Preheat oven to 300 degrees.
Filling Cut one half of the peach into 1/4 inch slices and set aside for topping later. Dice the other half of the peach into small cubes (about 1/4"). Mash together with a fork or mixer the diced peach and strawberries, 1 Tbl sugar, cream cheese, and the Grand Marnier (if you are using it).
Cut the bread into 1 inch slices. Using a serrated knife, cut a pocket in the side of each slice of bread. Try to make the pocket as deep as possible without cutting through the other side.
Place 2 tablespoons of the cream cheese mixture into each pocket.

Batter In a large bowl, whisk together the eggs, milk, vanilla, cinnamon and 1 Tbl sugar.

Heat up a large skillet over medium-high heat.
Place two or three slices of bread in the batter and let soak for 5 seconds. Flip over and soak again for 5 seconds. Remove the bread from the batter and place on a plate. Let the bread stand for 1 minute so the batter can soak in. Add a tablespoon of butter and a tablespoon of vegetable oil to the pan.
Place the soaked bread into the hot pan. When you have all the slices in the pan, start soaking the next three pieces as described before.
Cook each side until a light golden brown. Place on a cookie sheet or wire rack. When all the pieces have been fried, place the cookie sheet in the oven and bake for 10 minutes.

Remove from oven and top each serving with sliced peaches. Serve with maple syrup.

Overnight French Toast Casserole: from About.com



Cook Time: 15 minutes
Ingredients:

* 1/4 cup butter, room temperature
* 12 3/4 inch thick French bread slices
* 6 eggs
* 1 1/2 cups milk
* 1/4 cup sugar
* 2 tablespoons maple syrup
* 1 teaspoon vanilla
* 1/2 teaspoon salt
* powder sugar

Preparation:
Spread butter over bottom of large, heavy baking pan with 1-inch-high sides. Arrange bread slices over butter. In a large bowl, beat eggs, milk, sugar, maple syrup, vanilla and salt until well blended. Pour mixture over bread. Turn bread slices to coat thoroughly. Cover pan with plastic wrap and refrigerate overnight. Preheat oven to 400°. Bake French toast slices for 10 minutes. Turn bread over and continue baking until just golden brown, about 5 to 8 minutes longer. Transfer cooked French toast to serving platter or individual plates and sprinkle with powdered sugar. Serve immediately with syrup.

but has grown to be a breakfast classic.

1/2 tsp. Watkins Vanilla Extract
1/4 tsp. salt
6 slices day-old bread
1 Tbsp. butter

Preparation:
Combine eggs, milk, Vanilla, and salt in shallow bowl; mix well.
Dip bread slices in the egg mixture. Fry in melted butter until golden brown on both sides. Serve hot with maple syrup, powdered sugar, or tart jelly.

Makes 3 servings.

The Origin of the French toast

The popular history behind French toast (aka German toast, American toast, Spanish toast) is that it was was created by medieval European cooks who needed to use every bit of food they could find to feed their families. They knew old, stale bread (French term *pain perdu* literally means *lost bread*) could be revived when moistened and heated. Cooks would have added eggs for additional moisture and protein. Medieval recipes for "french toast" also suggest this meal was enjoyed by the wealthy. Cook books at this time were written by and for the wealthy. These recipes used white bread (the very finest, most expensive bread available at the time) with the crusts cut off, something a poor, hungry person would be unlikely to do.

Actually, recipes for "french toast" can be traced Ancient Roman times. One of the original French names for this dish is pain a la Romaine', or Roman bread. Apicius wrote: "Another sweet dish: Break [slice] fine white bread, crust removed, into rather large pieces which soak in milk [and beaten eggs] Fry in oil, cover with honey and serve." ---Apicius Cookery and Dining in Imperial Rome, edited and translated by Joseph Dommers Vehling , recipe 296 (p. 172)
