- Roast your beets instead of boiling in foil for about 60to 90 minutes depending on size.They hold in qiute a bit more flavour and nutrients.

- I usually nuke my beets.They come out pretty tasty,but I'll try the roasting method to compare.

- Oh Nuts ... I saw SMOOTHIES so here I came ... but BEETS ??? Man, I hate beets ... where's the recipes for banana/strawberry smoothies, tomato juice/beer smoothies, pineapple/mango ..... oh heck, I'll just have another beer !!!

- You really can't go wrong with fruit smoothies.Just grab whatever fruit is on hand.I use a Vitamix,the king of smoothie makers,which purees anything.For that reason,I have been known to add raw quick oats,flax seed,etc to my smoothies.

- Hmmmm ... you know, I truly love beets -- red beets cut up and on my salad, or sliced right out of the jar. But, don't think I'll do a smoothie ... but maybe some borscht?

- I too was a little leery at first,but it worked out well.Use one beet to start,peeled with a vegetable peeler,and cut into cubes.Add plenty of other fruits,such as bananas,an orange,and an apple,and you are good to go.It gives the smoothie a bit of an earthy flavor,but not at all objectionable.

- Good combo, but I don't think there is a need for sugar substiute as this recipe is VERY high in sugar as is.

- It is all on individual taste. That is why the sugar substitute says "optional". The beet taste is not for everyone and for people that have never had it before they may need the added sugar until they get accustomed to the taste of the beets.

- I add pineapple to my smoothies for sweetness,as I try to avoid sugar.I am in my 60s,and I find things don't have to be as sweet as when I was younger.

- Great option Michael! I find fresh pineapple is really hit or miss here. I had a great looking one last week but it wouldn't sweeten anything. LOL And then the week before I swear I had the best pineapple ever.

- Besides being lazy,I am not fussy,and just buy crushed pineapple in the tin.I get consistent sweetness that way. I find the name brands are more consistent as far as sweetness is concerned.

- I love beets and smoothies! My fave way to use beets is to great them raw into a salad...even non beet lovers, love beets that way.

- Im interested in adding fresh beets to my smoothies, but do tell, how do you peel it? It was suggested that I boil first for easy skin removal, but Im wondering if I would be boiling away the nutrients.

- Hi Necia,
To boil: Chop off the thick top and the tip at the bottom then cut in half or quarter if they are particularly large. Put in boiling water for ten minutes. Don't be concerned by the change of color. There are still many vitamins to go around.
I have also used them without boiling. Meaning, I peeled them raw, chopped them, and added as above. It is a little more awkward in the sense you end up peeling off more because it is stiff but the smoothie still tastes great.
