Easy Sugar Cookies Recipe

Betty Crocker sugar cookie mix makes it a breeze!

I found this on the back of a Betty Crocker sugar cookie mix (17.5 oz pouch).

Heat oven to 375 degrees (or 350 for dark or non-stick pan). Make cookie mix as directed--except decrease softened butter to 1/3 cup and stir in 1 tablespoon all-purpose flour with the cookie mix. Roll dough on floured surface until about 1/4 inch thick. Cut with 2-inch cookie cutter. (Keep remaining dough covered while rolling and cutting first batch of cookies.) Place 1 inch apart on ungreased cookie sheet. Bake as directed above. Cool 1 minute before removing from cookie sheet. Cool completely, Frost and decorate as desired

Easy Fortune Cookie Recipe

Everyone loves a fortune cookie favor!

INGREDIENTS
1 egg white
1/8 teaspoon vanilla extract
1 pinch salt
1/4 cup unbleached all-purpose flour
1/4 cup white sugar

DIRECTIONS
Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.

Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.

Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.

Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

Easy Chocolate Dipping Recipe

Fortune cookie favors even more delicious dipped in chocolate!

INGREDIENTS:
1/2 cup chocolate baking chips (I used mint flavored chocolate chips)

1. Line a 9 X 13 inch baking sheet with wax or parchment paper. Set the fortune cookies on the baking sheet. Place the chocolate chips in a heatproof bowl. Microwave on high power for 90 seconds.
2. Remove the bowl from the microwave and stir the chocolate (it will continue melting while you are stirring). If you are using a microwave with 600 watts of power or more, the chocolate should be melted or nearly melted at this point. If necessary, continue microwaving at 5 second intervals, stirring in between.
3. If you are using a lower power microwave, continue microwaving the chocolate at 15 second intervals, stirring each time, until the chocolate has melted.
4. Holding a fortune cookie by its ends, dip the rounded bottom of the cookie into the chocolate. Let the excess chocolate drip off and place the fortune cookie on the wax or parchment paper. Continue with the remainder of the cookies.
5. Place the cookies in the refrigerator to cool. Store in an airtight container.

Limoncello Cupcakes

Give you guests a treat with lovely, lemony cupcakes!

Ingredients:

1/2 cup plus 2 teaspoons granulated sugar
1 stick plus 1 tablespoon butter, softened
2 eggs, room temperature
3/4 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon finely grated lemon peel, no pith
2 teaspoons plus 2 tablespoons limoncello
1 tablespoon milk

Directions:

1. Preheat oven to 400 degrees. In the bowl of a food processor, combine all ingredients except for 2 tablespoons limoncello and milk. Pulse until the batter is smooth. As the food processor runs, slowly add in remaining limoncello and milk through the funnel and mix until completely incorporated into the batter.
2. Divide the mixture up into the 16 bun muffin pan and bake for 15-20 minutes until the cupcakes have risen and are golden brown on top. Remove from the oven and cool the cupcakes for a few minutes in the tin before removing from the tin and cooling completely. Once cool, frost and top each with a flower. Serve with chilled limoncello.

Cream Cheese Frosting

8 ounces cream cheese, softened
1 stick butter, softened
2 teaspoons limoncello
1/4 teaspoon grated lemon zest
2 cups sifted confectioners sugar

1. In a large mixing bowl beat the cream cheese, butter, limoncello and lemon zest at medium speed until smooth. Slowly add the confectioners sugar and beat at high until full incorporated and the frosting is light and fluffy, about three minutes.
