We love Fried Matzo

I am a Christian married to a Jew for over 20 years. Over the years I have discovered wonderful Jewish food. But a favorite in our house is the very simple, Fried Matzo. My hubby makes Fried Matzo for us most weekends. Here is how he makes it.

Mikes Fried Matzo Recipe

Ingredient:
1 piece of matzo for each serving. (4 servings are 4 pieces)
1 egg for each serving. (4 servings are 4 eggs)
oil (I prefer olive oil)
Salt and pepper to taste

Directions:
Beat eggs in large bowl.
Crumble soaked matzo into the eggs.
Heat oil in a skillet then add matzo egg mixture.
Cook until brown on both sides.
Add salt and pepper to taste.

4 sheets plain matzo, crumbled into 1/2-inch pieces (or use matzo farfel) $2.50 for a 16-oz. box Preheat the oven to 375 degrees F. Lightly oil a 9-by- 11-inch casserole pan and set aside. In a large frying pan, heat the olive oil over medium-low heat.

    I'm looking for recipes to try for our family's passover feast (we're Christians but my kids are learning about Jewish feasts in school). We'll have to try this out. Now to find matza in Japan!
