Basic Chicken Recipe

This recipe came from a Woman's Day magazine from many (many) years ago. It is a great goto recipe when you have the bags of frozen chicken breast in the freezer - and you have forgotten to thaw them out for a recipe. The result makes the chicken tender, juicy and full of flavor (whatever flavor you are hungry for that night!). There are five marinades to use with the basic recipe, but you could use anything in your refrigerator - salad dressing, barbecue sauce, salsa, or bottle marinade.
Ingredients
- 4 frozen - skinned & boneless chicken breast halves (5 to 6 ounces each)
- 1/2 cup water
- Marinade (recipes below)
- Garnish (see marinade recipes)
Instructions
1. Place chicken breasts in a large, preferable nonstick skillet. Pour marinade evenly over chicken breasts. Pour the water directly into the skillet all at once.
2. Cover, bring to a boil over medium-high heat and boil 5 to 7 minutes. Turn chicken over, reduce heat to medium and gently boil uncovered 7 to 8 minutes until chicken is no longer pink at center (cut a small slit in thickest part to find out). Marinade will boil down to a thickened sauce. If there's not enough to spoon over each serving, stir 2 to 3 tablespoons water into what's left in the pan.
3. Spoon sauce over chicken. Add garnish.

Marinade - Herbed Lemon Pepper
Ingredients
- 1/2 cup chopped scallions
- 2 to 3 tablespoons fresh lemon juice
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 1 teaspoon dried tarragon leaves
- 1 teaspoon each lemon pepper and salt
Instructions
Mix all ingredients in a small bowl. Use as directed in Basic Recipe.
Per serving (with chicken ): 255 cal, 36 g pro, 6 g car, 9 g fat, 90 mg chol, 855 mg sod.

Marinade - Tex-Mex

Ingredients
- 1/4 cup tomato-based chili sauce or ketchup
- 1 can (4 ounces) chopped green chilies
- 1 tablespoon fresh lime juice
- 1 teaspoon each chili powder and ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon hot-pepper sauce (or to taste)
- For garnish: chopped fresh cilantro
Instructions
Mix all ingredients except garnish in a small bowl. Use as directed in Basic Recipe.
Per serving (with chicken): 202 cal, 37 g pro, 7 g car, 2 g fat, 90 mg chol, 788 mg sod.
Skillets to Make Your Chicken Recipe
Marinade - Barbecue

Ingredients
- 1/3 cup tomato-based chili sauce or ketchup
- 2 tablespoons packed brown sugar
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 2 teaspoons cider vinegar
- 1/2 teaspoon spicy brown mustard
- 1/2 teaspoon ground ginger
- 1/2 teaspoon bottle liquid smoke (optional)
Instructions
Mix all ingredients in a small bowl. Use as directed in Basic Recipe.
Per serving (with chicken): 255 cal, 37 g pro, 13 g car, 5 g fat, 90 mg chol, 668 mg sod.
Marinade - Herbed Italian
Ingredients
- 2 tablespoons lemon juice
- 2 tablespoons vegetable oil
- 1 tablespoon white-wine Worcestershire sauce
- 1 teaspoon Italian herb seasoning
- 1 teaspoon paprika
- 1/2 teaspoon each salt and pepper
- 1 small onion
- quartered
- 1 medium-size clove garlic
- 2 tablespoons grated Parmesan cheese
Instructions
Process all ingredients except Parmesan cheese in a blender or food processor until smooth. Use as directed in Basic Recipe. Before serving, sprinkle with the cheese.
Per serving (with chicken): 256 cal, 37 g pro, 3 g car, 10 g fat, 92 mg chol, 459 mg sod.

Ingredients
- 1/4 cup reduced-sodium soy sauce
- 3 tablespoons dry sherry or water
- 1 tablespoon honey
- 2 teaspoons grated fresh gingerroot
- 1/2 teaspoon minced garlic
- For garnish: thinly sliced scallions
Instructions
Mix all ingredients except garnish in a small bowl. Use as directed in Basic Recipe.
Per serving (with chicken): 225 cal, 38 g pro, 9 g car, 2 g fat, 90 mg chol, 1,303 mg sod.
