Enjoy Delicious Fruit Salad In The Summertime
I enjoyed this Fruit Salad Recipe back in the 1970's when I was teaching at Pendleton Elementary School. I found out that it was the standard favorite dish for the teachers during the Teacher Appreciation Celebration. Since that time I have made this wonderful Fruit Salad every summer and shared it with many friends.
I recently made this when my cousin came for a visit and my 9 year old grandson helped me prepare it. He had his own ideas of how it should be layered and how the topping was to be applied. Actually, his method was probably better and it sure did taste great!
Fruit Salad Recipe

- Prep Time: 30 - 45 min
- Total Time: 1 hour
This fruit salad can be served anytime as an afternoon treat, dessert, or night time snack.
Ingredients
- 2 Cups Sliced Peaches
- 2 Cups Sliced Strawberries
- 2 Cups Blueberries
- 2 Cups Sliced White Seedless Grapes
- Topping: 8 oz soft Cream Cheese
- Topping: 8 oz Sour Cream
- Topping: 1/2 cup Sugar
- Topping: 1/2 tsp. vanilla
Instructions
Wash fruit, drain and slice fruit. Layer in compote.
Mix all the Topping Ingredients using a mixer and spread over the top of your layered fruit.
Add crushed pecans if desired.
You will need 2 cups of Strawberries
Slice the Strawberries for your Fruit Salad
Also, 2 cups of Blueberries
Save a few Blueberries to put on top of your Fruit Salad
And last but not least, 2 cups of White Grapes

This Fruit Salad is delicious

You can layer the fruit or mix it. Either way is fine. It is pretty to layer and to make sure they are along the sides of the bowl or glass. I usually try to layer starting with the sliced peaches, then strawberries, blueberries and save the white grapes for last. I slice the grapes down the middle long ways.
The topping will need to be mixed with a mixer until smooth. My grandson put the topping on the ones showing on these pictures. We topped with chopped pecans and a few blueberries.
It is best to make the Fruit Salad ahead of time, cover and place in the refridgerator. The topping will gradually seep into all the fruit which not only looks pretty but distributes the taste.
One year I purchased several plastic fun looking parfait glasses and filled them with this Fruit Salad. I then took them around to friends as a surprise. It was fun. I have also given the individual Fruit Salads to friends who were in the hospital or recuperating from surgery. Now, that was a big hit.
You can put the Fruit Salad in a Bowl or a Parfait Glass
I served this Fruit Salad in ramekins alongside Spaghetti Salad
Good Combination: Fruit Salad and Spaghetti Salad

Spaghetti Salad
Cook Spaghetti noodles and drain.
Add diced tomatoes, diced cheese, diced bell pepper and onion
After that you can add whatever else you want such as
Cucumbers, olives, squash, cauliflower, etc.
Toasted Pecans or Almonds would be a
great addition, also.
Mix with mayonaise
A wonderful Summertime Treat!

- Fruit salad is very easy to make, a lens about it could be expected to be fairly ordinary. But add some fun photographs, fancy text, a few videos (love The Wiggles by the way), and you have an extraordinary lens. I really enjoyed this, nicely done. I love fruit salad too, and I enjoyed leaving a blessing behind.
