Sometimes it just all gets to be too hard to cope with doesn't it?  You try to feed the family with healthy food but there is always one child who rebels.  My son was a horror!  Let me tell you about him.

How this recipe saved me. 

Life would have been easy if it wasn't for my son. Much as I love him, he made things really difficult for me.

I have worked very hard at putting together healthy meals and snacks for the family. Luckily, 2 of my 3 children are keen to try anything new and they love their fruit and vegetables. The third child, however, is completely different.

This is the child who only eats junk. If you looked into his tummy you would find potato chips and sweet biscuits together with the odd ice cream. The only vegetables he tolerates are potatoes, corn, broccoli and carrots. Fruit? Forget about it!

Unfortunately this is the child with the sluggish digestion and occasional case of constipation. This would be easily improved by eating a couple of pieces of fruit each day, but no! We can't possibly do that because it isn't deep fried and salted!

Like any other child he likes to fiddle with his food (as a WWE fan he has been known to finger-wrestle 2 carrot sticks on his dinner plate.) I decided to make fruit more fun by chopping it up and letting him dip it into a bowl of healthy dip. Yes, it was messy at first. After all, you can't really body slam an apple slice from the edge of the bowl without a few dippy splatters everywhere.

After an experiment or two I came up with the World's Best Dip Recipe. I call it that because this was the recipe that seduced my son into becoming a fruit eater. His digestion is markedly improved and ony a few bananas were leg-dropped in the process.

World's Best Fruit Dip Recipe 

Vanilla Cinnamon Fruit Dip

1 packet instant vanilla pudding mix
1 cup milk
1 cup sour cream
Cinnamon to taste.

Blend pudding mix with milk and sour cream until smooth. Add cinnamon to taste and stir again. Refrigerate for at least 1 hour.

Serve in a bowl on a large platter surrounded by sliced fruits. It goes well with apples, bananas, strawberries and even grapes. It is fun to hunt for the grapes that have been dropped into the dip. Just ask the kids!

My Backup Plan 

Somedays I don't get time to make World's Best Fruit Dip so I need something to fall back on. This is a fairly good backstop and has the virtue of being almost instant.

Backstop Fruit Dip Recipe.

1 jar apple sauce (the kind you have with roast pork)
1 bottle thickened cream
Sprinkle nutmeg

Empty the apple sauce into a bowl, stir through a trail of cream. You need just enough for a pattern and to make the sauce a little more fluid. Sprinkle nutmeg (cinnamon works too) across the top and add the bowl to the platter of fruit.

Just watch the fruit disappear!

Strawberry Dip 

Thanks Kate for sending me this recipe. It is a beauty!

Ingredients:

2 Cups Strawberries, fresh or frozen (defrosted)
1 Cup Vanilla yogurt
1/4 Cup Cream cheese

Method:

Defrost frozen strawberries or, if using fresh strawberries, wash thoroughly. Combine all ingredients in blender or food processor and mix until smooth.

Simple and tasty!
