for a quick satisfying meal, almost every woman turns to her frying pan. and no wonder for this one useful piece of equipment can turn out a rich meat stew as well as a crusty golden brown chop, or a dish of creamed carrots as easily as a corn fritter or potato patty.even desserts can be made quickly and easily in the skillit.

fried tomato slices

grand maslice firm tomatoes crosswise about one half inch thick. dip in flour seasoned with salt and pepper. fry in hot skillet containing enough grease to cover the bottom generously.

veal cutlets-paprika sauce

boy with dogs1 1/2 pounds boned veal [ shoulder or shank ]-1/4 cup milk - 1 teaspoon salt - 1/8 teaspoon pepper - 1 egg beaten with 2 tablespoons water and 1 cup dry crumbs------------grind veal finely, add milk and seasonings, shape into flat patties or cutlets, coat with fine dry crumbs [ bread or cornflakes ]. dip into egg mixture again fry in hot skillet containing grease about 1/4 inch deep until delicately brown on both sides. cover and cook very slowly for about 10 minutes, remove to hot platter. serve with paprika sauce. to the grease left in pan stir in 3 tablespoons flour, slowly add 1 1/2 cups of milk or stock, Add salt and pepper add 1 teaspoon paprika cook until thickened, pour over cutlets. serves 4- 6

fried scallops

1 quart scallops....2 tablespoons salad oil ..4 tablespoons lemon juice.....1/2 teaspoon salt....2 tablespoons water...1 cup fine dry crumbs.....1 egg blend together oil, lemon juice and salt, add scollops and let stand about 30 minutes, pour off liquid and prepare scallops for frying by coating with egg diluted with water then with crumbs, fry in deep grease heated to 365-375 or hot enough to brown an inch cube of bread in 60 seconds. remove when golden brown and drain on paper serves 4-6

fried oysters

select large oysters, sprinkle with salt and pepper. dip first in beaten egg, then in finely ground crumbs [ use dry bread or crackers or any ready to eat cereal ] fry until golden brown in deep grease heated to 365 degrees or in skillet containing about 1/2 inch hot grease drain on paper, serve hot with chila sauce or catsup.

fish fillets with sunny sauce

have fillets clean and dry, sprinkle with salt and pepper and roll in corn meal or in slightly beaten egg and finely ground dry crumbs. fry in a hot skillet containing enough grease to cover the bottom generously,turn as soon as one side is browned , cover and cook fo a few minutes longer, transfer to baking dish add sunny sauce sprinkle with grated cheese and place in moderate oven over 350 degrees for about 10 minutes or long enough to brown top lightly..............................sunny sauce 2 tablespoons grease, 2 tablespoons flour, 1 cup milk, 1 tablespoon vinegar, 2 egg yolks. blend flour with grease stir in milk until thickened, remove from heat add vinegar and well beaten egg yolks with salt and pepper.

pan fried corn fritters

1 1/4 cups flour...1 reaspoon baking power 1 teaspoon salt....2 eggs...1/4 cup milk...1 1/2 cups corn....sift together flour,baking powder and salt, a dd beaten eggs, milk and corn [ fresh or canned whole kernel ] drop from tablespoon onto skillet well greased, brown on both sides, arrange on platter with glased carrots and crumbled asparagus serves 4...................glazed carrots cut cooked carrots into crosswise or lengthwise slices add 1 or 2 tablespoons grease until edges start to brown, sprinkle with brown sugar cover and heat until glased. crumbed asparagus saute fine dry bread crunbs until golden brown, sprinkle over hot asparagus.

    I may have to try fried tomato slices. I've heard of them, but haven't had the honor yet.
