My Blackberry Cream Fudge Recipe

With Variations

This is a very easy to make, very smooth fudge that is hard to stop eating! The key flavoring ingredient is blackberry brandy but you could use any liqueur. The alcohol is not as strong as, say, a rum ball, but there is enough to add a little zing. The flavor is fantastic.

This would be great dipped in chocolate, too. If you want to try it cut small squares and then freeze them. Then melt almond bark or other dipping chocolate and dip the frozen squares.

Ingredients

2 bags of white chocolate chips (about 4 cups)
1/2 cup of heavy cream
1/8 cup of blackberry brandy
Red and blue food coloring

Instructions

Prepare an 8 or 9 inch square pan or the same sized cake pan by lining with Reynolds Rapid Release Foil.

Put all ingredients in a microwave safe bowl and heat until some of the chips are soft. I would try microwaving in 2 minute increments and then stir to see if it melts as you stir. It would probably be better to not cook until the chips are completely melted to avoid scorching. Get them heated and then stir until melted. That gives it a smoother texture anyway. You could also use a double boiler.

Stir in food coloring. I found that I needed about a 3:1 ration of red:blue. Start out with a very small amount of red, then a very small amount of blue. If you end up with gray don't panic, just add more red a little at a time until you get to a nice blackberry-ish color.

Pour fudge into prepared container and then chill until solid. If you leave it in the refrigerator for several hours you will probably have to set it out on the counter to warm up a bit before you try to cut it. Peel away the foil before cutting.

Apricot Brandy
Peppermint Schnapps
Grand Marnier or Cointreau
Amaretto
Rum
Kahlua

Cook the cranberries down in corn syrup then add evaporated milk, chocolate chips, confectioners sugar and vanilla and beat until smooth.
Strawberry Fudge
This recipe is flavored with strawberry preserves and is made like divinity.
Quick Holiday Raspberry Fudge
Sweetened condensed milk and raspberry flavored chips make this a quick fudge to make, indeed.
Spiced Pumpkin Fudge (Even though pumpkin is not a fruit)
A cooked recipe, it has canned pumpkin, pumpkin spice, marshmallow cream, butterscotch baking chips, and toasted almonds...what's not to love?
Key Lime Macadamia Nut Fudge
This is a sweetened condensed milk based fudge with just enough cooking to melt everything together.
Peaches and Cream Fudge
Pureed fresh peaches, evaporated cream, white chocolate chips, butter, etc. going into this cooked fudge. It takes a lot of cooking and no temperature gauge, so good luck.
Lemon Butter Fudge
This one looks hard but really makes my mouth water to think about lemon curd in fudge form. If you make this and it turns out okay, send me some.

Chocolate and peanut butter chips with sweetened condensed milk.

Make Chocolate Covered Fudge

Make one of the uncooked fudge recipes. After refrigerating until solid, cut into 1 inch squares and put on a cookie sheet. Cover and freeze until solid. Prepare candy coating or almond bark as directed. Dip frozen fudge squares in the melted coating. Let thaw (or not) and enjoy.
