Fun Green Food Ideas for St. Patrick’s Day

St. Patty Pretzels

Ingredients
- Mini pretzel twists
- Green chocolate candy melts
- White chocolate candy melts (optional)
- Candy sprinkles and colored sugar (optional)
- Fork or skewer
- Wax paper
Instructions
Melt the candy melts in either a microwave safe bowl or on the stove (be careful to stir continually and keep heat low to prevent burning). Using the fork, dip the pretzel into the chocolate, and place it on the wax paper. Sprinkle your colored sugar or sprinkles on, if wanted, while the chocolate is still wet. Let the pretzels dry for at least 15 minutes, and put them into a sealed container. Don't refrigerate or freeze.
Make Green Frosting!
Rainbow Skewers
(for the leprechaun, of course!)

Ingredients
- Red Fruit - watermelon cherries or strawberries
- Orange Fruit - orange sections cantaloupe or mango
- Yellow Fruit - banana or pineapple
- Green Fruit - grapes honeydew kiwi blueberries
- Purple Fruit - grapes or plums
- Skewers
Instructions
Wash and cut fruit into cubes. You can then arrange the fruit in a rainbow or place the fruit in separate bowls and have the children make their own. A healthy, delicious, leprechaun-worthy snack.
For dinner, you can always arrange a plateful of healthy green vegetables! If that isn't a guaranteed crowd pleaser, try adding green food coloring to foods like mashed potatoes or pancakes, or serve pasta and pesto, spinach pasta, pea soup, or how about green eggs and ham? These are all fun if you don't like the American tradition of having corned beef and cabbage.

Making Irish Treats
This is where green food gets fun! Making decorated sugar cookies with green icing (perhaps in the shape of a shamrock) is always a good idea, as are white cupcakes and frosting with a few drops of green food coloring.Kids will love to help in this recipe. Not only to help make it but of course they will love to eat the dessert too! Kids love anything that is different, and going green with all these snacks is certainly different!

Mint Chocolate Ice Cream Sandwich Dessert

Ingredients
- 12 ice cream sandwiches
- 1 carton frozen whipped topping thawed
- 1 jar hot fudge ice cream topping
- 1 teaspoon mint extract
- 1 cup Andes Candies Chocolate Mint Chips
Instructions
Cut four of the ice cream sandwiches in half. Arrange four whole ones side by side in an ungreased 9x9 pan. Lay 1 ½ pieces of sandwich at the end of each of the four whole sandwiches. This should fill the bottom of the pan. Spread this with a thin layer of the whipped topping.
Pour the hot fudge into a microwave safe bowl and heat for 15 seconds. Add the mint extract, and spoon half of the mixture over the whipped topping. Add another ice cream sandwich layer, followed by a layer of the remaining hot fudge, and top with whipped topping. Cover with aluminum foil (but make sure the foil is not touching the whipped topping) and freeze for at least 3 hours. Remove from freezer and let it sit for about 15 minutes. Sprinkle with the mint chips, cut into squares, and enjoy!
You may have noticed this one is not really green. But it's so delicious, you won't care. Add some green sprinkles or green mint candies to the top as your nod to St. Patrick.
You can find green beer in pubs and bars all over, or you could get a bit more sophisticated with this next drink.

Green Apple Martini

Ingredients
- Cinnamon and sugar for rimming the glass
- 5 tablespoons vodka
- 5 tablespoons sour-apple schnapps
- 5 tablespoons lemonade
- 5 tablespoons lemon-lime soda (Sprite or 7-Up)
Instructions
Put vodka, schnapps, lemonade, soda, and ice into a cocktail shaker. Cover and shake well. Dip the rim of your glass into a shallow dish of sugar and cinnamon (equal parts). Strain the shaken mixture into the glasses. Cool, crisp, delicious, and green.
For kids, you can keep the Sprite or 7-Up and forget the alcohol. Instead, get 2 gallons of lime sherbet for 2 liters of soda. Let the sherbet soften in the fridge for an hour or two, and then mix in a punch bowl with a hand mixer. Serve and enjoy.
St. Patrick's Day is fun for everyone. Enjoy your green food while you celebrate your Irish heritage. You don't even have to be Irish!
