Funnel Cakes

One of the only things I look forward to when I go to a Carnival is Funnel Cakes! I finally found out how to make them at home, and guess what...It's a lot cheaper than paying $6 at the Carnival!

Funnel Cake 

Sprinkle on some powdered sugar and enjoy!

Ingredients:
1/2 cup Flour
1/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1cup milk
1 teaspoon vanilla
powdered sugar

Here's what to do:
Mix flour, sugar, baking powder, baking soda, and salt in large bowl. Beat eggs, milk, and vanilla in medium bowl. Add egg mixture to the flour mixture and mix well. Pour into hot oil/grease (works best in a deep fat fryer)
*hint* Using a funnel to pour the batter into the grease helps the funnel cake to appear like those you buy at a carnival, it's also easier to make the shapes and lines.
Fry until golden brown, immediately sprinkle with powdered sugar.

Variations:
You can also top with strawberries, cherries, blueberries, or anything else that sounds yummy! My favorite is melted chocolate and caramel!

I had my first funnel cake a couple of months back and now I ALWAYS have to grab one at any of the local events. Never thought of making my own though!
