Tasty Garden Vegetable Ideas!

Your vegetable garden is doing so well, even after you gave your mother, your brother, your next door neighbor and the lady down the street some of your vegetables, you still had more than you knew what to do with!(okay, maybe you didn't have that many to give away)But anyway,I'd like to share some of my tastiest ideas for what to do with your garden harvest.

Corn:
The best idea I have here is easy-grill it!
Pull back the husks without removing them, clean off the corn silk, butter or oil the corn if you like, cover the cob back up with the husks, and grill for fifteen minutes.

Tomatoes:
Let me count the ways; Tomato salad, chopped fresh on frozen or homemade pizza or pasta, Roast plum tomatoes for about 45 minutes in the oven then peel and place in a food processor with some basil and a clove or two of garlic for a lovely sauce.

Peppers:
Grilled, roasted, grilled-did I say grilled? Oh sorry. Cut the tops off of whole sweet peppers, clean out the ribs and seeds and roast them in the broiler. When the skin is black, peel the peppers keeping them whole, and stuff them with slabs of your favorite cheese such as cheddar, mozzarella, feta-and sprigs of herbs. Now put them in the...you guessed it grill! Let the cheese melt and voila! A really tasty treat-you can even add chopped up tomatoes or squash to the filling.

Yellow Squash, Zucchini or Eggplant:
Do I need to say it? Just slice and grill!

Obviously I love all vegetables grilled. You could steam them first then grill them. Roasting them in the oven also brings out their sweetness. After I've done that I like to make homemade pizzas with them.

You can also stuff tomatoes as well as zucchini, Experiment. Have fun. Enjoy!

Ways with Roasted Peppers 

One of the things my husband and I always grow in our vegetable garden are peppers. We grow everything from Sweet peppers to Cubanelles to Hot peppers in many varieties. But my favorites are roasted red sweet peppers. I look for things to put them on.

I use them on pizza. I put them in sandwiches-roast beef or tuna melts. I put them on garlic spaghetti. I also put them in tuna casserole, which I make with cream cheese in the sauce and mozarella cheese sprinkled on top. I just can't get enough of them.
