German Pancakes/ Eierkuchen... a Great Way to Start the Weekend Off Right!
Weekends tend to be controlled chaos in our house. 3 kids, husband, dog, cat, sports, activities, chores, obligations all pulling into different directions. I try to get everyone started with a full stomach, so we have enough energy to get through it all.
Pancakes, German Pancakes, are just the ticket. They can be filled with any number of fillings- fruit, jam, Nutella, or even sugar. They are more a crepe than a traditional American pancake, and oh so delicious.
I grew up on these. Mom made them for us, so did my Oma, and now I make them for my kids and their friends, because being an Angry Baker isn't just about putting things in an oven, it's about filling tummies (and keeping chaos at bay...)

- Serves: 6 to 8 pancakes
- Prep Time: 10 minutes
- Total Time: 25 minutes
Dr.Oetker is like the Betty Crocker of Germany. His name is on loads of Cookbooks and cooking products. His School Cook Book (SchulKochBuch) is indispensable in my house. I've converted the ingredients from metric to make it easier for you to make.
All you need is a blender, a frying pan, and a spatula.
Add sugar if you are making pancakes with a sweet filling. If you prefer savory, leave the sugar out.
Ingredients
- 1 3/4 cup (250g) Flour
- 4 Eggs
- 2 cups (1/2 liter) Milk
- 1 tbl Sugar
- canola oil or butter for frying
Instructions
In a blender, combine flour, eggs, milk, and a spoonful of sugar. Blend until fully combined.
Let sit for 5 minutes.
Now... here's where you make a decision.... if you feel really confident in your flipping ability.. use a large frying pan. If... like me... you tend to make a mess of things when you make them too big... get a smaller one.
Heat tablespoon of oil or butter in small nonstick frying pan. Pour about a half a cup, or more, of batter into the hot pan. Pick it up and swirl it around a bit to spread it out. You can add more. Fill the bottom of the pan... should go about 1/8 to 1/4 inch thick (don't get your rulers out.. eyeball it)
When bubbles start forming, peek under a corner (I know, I know, there are no corners on a round pancake! that was just a test) Peek underneath. If it's starting to get golden, flip it.
Let other side cook a while, peek occasionally. When golden, put it on a plate in front of a hungry child... or put it on a plate in a warm oven.
Repeat until batter all gone. (you'll need to add butter or oil to the pan between every one or two pancakes... it's ok... tomorrow you'll be back to your fiber cereal)
Keep in mind, the first pancake generally doesn't work. Don't know why. Don't fret. Take it out back, throw it like a frisbee to the dog. He'll be happy.
Serve the pancakes with jam, fruit fillings, NUTELLA!! or sugar

Topping Your Pancakes
Be Creative
My youngest likes to put on everything!!! Fruit, jam, sugar, and most of all whipped cream!
-Berry Sauce
-Jam or Preserves
-Fresh strawberries, blueberries, ANY berries!
-Sauteed Apples with cinnamon
-NUTELLA (this is a favorite)
-Powdered Sugar
-granulated sugar
-whipped cream
Berry Sauce
Works with Fresh or Frozen Berries
- Serves: 2 cups
- Prep Time: 5 minutes
- Total Time: 20-25 minutes
This is a yummy topping to pancakes, but can also be served over ice cream or pudding. I love it warm.
I prefer blueberries or boysenberries, but strawberries are coming in season here, so I used them this weekend.
If berries aren't in season, I buy the frozen bags from Costco or Trader Joes... gives you that summer taste, even in winter.
(If there is any left the next day, I eat it cold over vanilla yogurt, to atone for the pancakes)
Ingredients
- 2 cups Berries...fresh or frozen
- 1/2 cup water
- 1/3 to 1/2 cup sugar
- teaspoon cornstarch (if needed)
Instructions
Put berries, water and sugar in a saucepan, turn heat to medium. Bring to boil, stirring occasionally.
Watch the pot, don't let it boil over or burn.
Let the berries break down a bit. The sauce will thicken as they do. This could take 20 to 25 minutes. If the sauce doesn't get thick enough, but the taste is right, combine a teaspoon cornstarch with a teaspoon of cold water in a cup, then pour into the sauce, stirring as you go. Cook a few more minutes.
Pour into a pitcher, let cool enough for the kids to eat.

Cinnamon Apples
This is a great filling in Fall or Winter
- Serves: 2 to 3 cups
- Prep Time: 10 minutes
- Total Time: 25-30 minutes
Apples and cinnamon... mmmmm... perfect together, and delicious in these German Pancakes.
Simple to make, I also serve this over ice cream.
Ingredients
- 2 to 3 apples
- 3 to 4 Tbl. Sugar
- 1 tsp. Ground Cinnamon
- 3 to 4 tsp Butter
Instructions
Peel, core and slice the apples (if you have one of those gadgets that cuts the apple into slices, here's your chance to use it.) A tart or cooking apple is best.
Melt the butter in a saute or frying pan. Add the Apples, Sugar, and Cinnamon. Stir and shift around over medium heat until the apples start to soften, and the sugar caramelizes.
When the apples are soft... but not mushy... and they look done, they are.
Serve

And of course, my kids all firmly believe that ANYTHING tastes better with melted cheese on it.

German pancakes... aka.Swedish Pancakes or Crepe Relatives, are the pancake of my childhood, and I adore them. But I understand some of you out there may prefer the American style pancake....

Croatia has been under German influence for too long not to know about "palatschinken" i.e. German crepes. We flip it all right :) Favorite fillings are chocolate syrup or marmalade and common salty variations are with mushrooms, cottage cheese and cream (roasted in oven after filling) or with ground meat. Any combination is fine by me :)

- I will make them today for a hungry teen studying hard for her school exams and I know she'll love them. Kid likes them with Merenda, which is a kind of Nutella topping, only with more marked hazelnut taste. Yeah, when I was a kid here in Greece, commercials run BETWEEN the shows too, but today it's American-style, with commercials during the shows. I guess Germany must follow the same style now. Things are not always evolving for the better...
