Wondering how to make German potato salad? Like fast and easy recipes? Want something warm, filling, and just a bit different? Then try this German Potato Salad recipe, prepared in the microwave.

A friend of the family gave me this recipe many years ago. It's quite simple and very tasty, and authentic enough to please my ethnic food-loving husband. Add sauerkraut and brats on a bun and you have a flavorful meal that will satisfy any hearty appetite.

What Makes This Potato Salad German? 

Simple answer, it's warm and it has a slightly sour vinagrette dressing.

And it contains bacon. According to this wikipedia article, what we think of as German potato salad is generally served in southern Germany, while potato salad served in northern Germany more closely resembles our traditional, creamy American potato salad.

The picture above is mine, and I have to tell you that my husband rated that meal of pork roast, sauerkraut, and Microwave German Potato Salad as "Outstanding!" I had to agree, it was absolutely delicious.

Ingredients for German Potato Salad 

You probably have most of these on hand, so why not try a batch today?

Microwave German Potato Salad

4 cups sliced cooked potatoes
6 slices bacon
1/2 cup chopped onion
2 Tbsp. all-purpose flour
2 Tbsp. sugar (or a little less)
1 1/2 tsp. sale
1/2 c. vinegar
1 tsp. celery seed

How to make German potato salad in the microwave. 

Ingredients ready? Here's what to do next.

Bake potatoes in the microwave. Cool slightly, peel, and slice.

Cut bacon in small pieces. Cook in glass dish for 5 minutes on high. Stir halfway through cooking time. Stir in onion. Cook for 2 minutes on high.

Stir in flour, sugar, and salt. Mix thoroughly. Slowly stir in vinegar. Cook in microwave for 3 minutes. Stir every minute.

Blend in potatoes and celery seed. Toss lightly and serve.

The best way to cut up the bacon for this recipe is with kitchen shears. 

This is one of my favorite, most versitile kitchen tools. Every kitchen needs at least one pair.

My favorite feature of my kitchen shears is that they come apart easily so that I can pop them into the dishwasher after I use them. I use mine to cut up bacon for recipes like this one, for cutting chicken breasts into pieces for chicken nuggets, and for cutting slices of pizza, among other tasks. If you don't have a good pair of kitchen shears, consider in investing in one. You won't know what you did without them, I promise!
