Ginger
Zingiber Officinale, also known as ginger, is a root with a peppery, spicy flavor that is available in fresh root form, ground, crystallized and candied. Ginger is a creeping perennial that is indigenous to tropical Asia and other tropical areas like Jamaica. Today, it is cultivated in the U.S., India and China. When people speak of ginger, they generally refer to the fresh or dried, whole or powdered rhizome of the plant itself. Ginger is in the same family as Turmeric.

Pickled Ginger Recipe
Makes Approximtely 1 Quart
Ingredients:- 3 lbs. of fresh ginger root
- 1 tbs of sea salt
- 4 tbs of whey, if whey is not available use 1 extra tbs of sea salt
- 1 cup of purified water
Directions
After peeling the ginger, slice it very thinly. Then place in a large bowl and pound lightly with a wooden pounder to release the juices. Put the ginger into a wide mouthed mason jar and press it down lightly. Mix the water, salt and whey together then pour into the jar. Add more water if necessary to cover the ginger. The top of the ginger should be at least 1 inch below the top of the jar. Cover tightly and store at room temperature for about 3 days before moving to the refrigerator or cellar.
