Ginger

Zingiber Officinale, also known as ginger, is a root with a peppery, spicy flavor that is available in fresh root form, ground, crystallized and candied.  Ginger is a creeping perennial that is indigenous to tropical Asia and other tropical areas like Jamaica.  Today, it is cultivated in the U.S., India and China.  When people speak of ginger, they generally refer to the fresh or dried, whole or powdered rhizome of the plant itself.  Ginger is in the same family as Turmeric.

Ginger is a tuber that is consumed whole as a delicacy, medicine, or spice. It is the rhizome of the plant Zingiber officinale. It lends its name to its genus and family (Zingiberaceae). Other notable members of this plant family are turmeric, cardamom, and galangal.

Ginger cultivation began in Asia and has since spread to West Africa and the Caribbean. It is sometimes called root ginger to distinguish it from other things that share the name ginger.

Pickled ginger is also known as gari in Japan. It is typically served with sushi. Pickled ginger is intended to be eaten between different kinds of sushi to cleanse your mouth and enhance the flavors.

Pickled Ginger Recipe 

Makes Approximtely 1 Quart

Ingredients:

  • 3 lbs. of fresh ginger root

  • 1 tbs of sea salt

  • 4 tbs of whey, if whey is not available use 1 extra tbs of sea salt

  • 1 cup of purified water


Directions
After peeling the ginger, slice it very thinly. Then place in a large bowl and pound lightly with a wooden pounder to release the juices. Put the ginger into a wide mouthed mason jar and press it down lightly. Mix the water, salt and whey together then pour into the jar. Add more water if necessary to cover the ginger. The top of the ginger should be at least 1 inch below the top of the jar. Cover tightly and store at room temperature for about 3 days before moving to the refrigerator or cellar.
