There is nothing like a hot, fragrant gingerbread fresh from the oven!
Over the last fifteen years, I've baked scores of gingerbread cakes for family and friends during the holidays. I started with a basic recipe and have refined it over the years. After experimenting with spices and other ingredients, I believe I now have the most fabulous recipe for ginger lovers and I'd like to share it with you.
To make this wonderful holiday gift, be sure to bake your cake in one of the beautiful Bundt pans I have listed at the bottom of this page. You will not only make a most delicious cake, but when wrapped as shown at the bottom of the page, will create an impressive gift.

This beautiful Bundt pan will create a cake that will make a fabulous gift for the holidays. Just bake, cool, sprinkle powdered sugar over the top and wrap it in cello with a wired ribbon and you have a perfect gift!

Teri's Gingerbread Cake
Get your plate and fork ready!
3 cups all purpose flour
2 tsps. baking soda
3 tsps ground ginger
2 1/2 tsps ground cinnamon
3/4 tsp ground cloves
1/2 tsp sea salt
1 cup unsalted butter, melted, cooled slightly
(2 sticks)
1 cup packed light brown sugar
1 cup mild-flavored molasses (light)
2 large eggs
1 cup hot water
1 cup finely chopped crystallized ginger (use food processor if you have one)
~ Position rack in center of oven
Preheat oven to 350 degrees
~ Generously butter and flour a 12 cup bundt pan (or use Pam or other baking spray with flour)
~ Sift flour, baking soda, ground ginger, cinnamon, cloves and salt into medium bowl.
~ Combine melted butter and brown sugar in large bowl. Beat until well blended.
~ Gradually, beat in molasses.
~ Beat in eggs.
~ Add dry ingredients and beat until well blended.
~ Gradually beat in hot water.
~ Stir in chopped crystallized ginger.
~ Transfer batter to prepared bundt pan.
~ Bake until tester inserted near center of cake comes out clean. about 50-55 minutes.
Be careful not to overcook or cake will be dry.
(I bake mine for 50 minutes)
~ Cool cake in pan on a rack for 10 minutes.
~ Turn cake out onto rack and cool completely.
(can be made 1 day ahead. Wrap in plastic; let stand at room temperature).
~ Sprinkle top with powdered sugar.
~ Cut cake into wedges.
~ Garnish with whipped cream and serve.
Cake can be frozen or you can wrap according to my gift wrap instructions below and ship it.
Our east-coast family says it tastes great after being in transit for up to a week.

Wrap It for a Beautiful Gift!
Wrap Your Cake and Give a Wonderful Holiday Gift
A delectable cake inside and out!
You will need the following:
One 12 inch cardboard cake circle
(you can find these at party stores or cake supply stores) Online I found them at: papermart
One roll cello wrap with Holiday patterns on it.
20" wide (length can vary from 12 feet to 100 feet)
Online you can find cello at: nashville wraps
One twist tie
Two 2.5 to 3 foot lengths of 2-3 inch wide wired ribbon (Costco has wired ribbon at great prices and one roll will decorate dozens of wrapped cakes)
If you are shipping the cake, you'll need a 12" x 12" x12" cardboard box.

Gift Wrap Instructions
If you plan to ship your cake, wrap it tightly with plastic wrap to keep it fresh during shipping.
Roll out cello wrap to about 4 times the length of the cake circle. Cut cello.
Bring the edges of the cello up and hold them together in your left hand.
Push in the sides of the cello that are sticking out around the cake. Gather together neatly.
Make sure the cello wrap is gathered evenly and that the gathered part is centered over the hole in the middle of the cake.
Tie a twist tie tightly around the gathered cello as close to the cake as possible, without putting pressure on the cake.
Take one length of wired ribbon and wrap around the twist-tied area. Make a simple bow.
Take the other length of ribbon, and on the opposite side (180 degrees)from the bow you just made, make another simple bow.
Now trim the legs of the bows so that none of the ribbon legs are longer than the bottom of the wrapped cake.
Hold the jagged top edge of the cello and use a pair of scissors to cut an even line across the top.
Voila! A beautifully wrapped cake.
To ship, slide cake into 12" box (it should fit perfectly and the cake circle will hold it in place).
Pack paper or bubble wrap around the cake gently.
You can hold the cello top together while you fill the box.
There is plenty of room for a card and a few lightweight stocking stuffers if you like.
