this SAUTEED MUNG BEANS recipe is from knorr packaging. Mung beans is populary known as MONGGO BEANS in the Philippines. It's a staple food in every Filipino kitchen specially on Friday. When I was a kid, we usually have sauteed mung beans for lunch or dinner on Friday in our house. I don't know why it has to be on Friday, according to my Nanay (mother) it's a Pinoy Tradition . I really don't know and I do not practice it anymore, though. I cook monggo anytime, if I feel like it. Hmmm... my fave!!!
I always find recipes from packaging are quite easy to follow.
Ingredients
for sauteed mung beans with Knorr Pork Broth Cubes
1 cup whole mung beans4 cups water
5 cloves garlic, mashed
1 pc medium-sized onion, chopped
3 pcs medium-sized reed tomatoes, chopped
1/4 kilo pork strips
2 pcs Knorr Pork Broth Cubes
1/4 cup bitter gourd, sliced very thinly
1 cup moringa (malunggay) leaves
Procedures
...let's cook!

1. Wash mung beans thoroughly, removing all floating particles. Drain. Soak beans in 2 cups of water (or more if needed) for about 4 hours. Or just simply boil the mung beans. Once it is boiling, bring down the heat to low and simmer until the beans is soft and separating from the skins. While the mung beans is simmering, remove the cover and immediately scoop out the skins.You have to do this very quickly while the skins are floating because it will immediately goes down (or sink) again upon lifting the cover. Then cover and wait for it to boil again and repeat the process until you've removed as much skin as you can. Remove from heat and set it aside.
2. In a saucepan, saute garlic, onion and tomatoes. Add pork strips.
4. Pour-in beans and let it simmer.
5. Add Knorr Pork Cubes.
6. Simmer and stir occasionally until all the ingredients are well incorporated. Add a little salt and pepper if needed.
7. Add bitter gourd and simmer for 2 more minutes. Add moringa (malunggay) and remove the saucepan from heat.
