Finding tried and true gluten free recipes is easier than ever

Some cooks never use a recipe - they learned to cook by watching and doing. Others learn by strictly following a cookbook (or now a YouTube video). But now you are faced with a challenge. Converting old recipes into gluten free - or finding new recipes - and new techniques. Going gluten free is not a simple matter of substitutions - there is a lot of chemistry involved in getting the texture, consistency and flavor right when using different ingredients. So . . . . the challenge is to find great resources.

Gluten free can be exciting, fun, and most of all easy. It need not be boring. And it certainly need not be a drudge. All that is needed is an attitude of adventure, a little time spent learning a few new techniques, and a little time spent shopping for new ingredients.

Resources to make it easy!

What can make going gluten free easy and fun is having the right resources around you. Others have made this transition before you - learn from their mistakes, let their experience put you ahead of the learning curve.

On this site I have collected several resources which you may find useful. Take time and find good resources. This is important if you are to make the most of your gluten free experience - working on feeling better - and raising the level of health in your family.

Building on the experience of others will save you time and money. We've all had those glorious failures in the kitchen. After a few years we can look back and laugh - but when your wasting time and money in the kitchen it's not so funny. A good recipe book gives you great recipes. A Great recipe book gives you knowledge - the how's and why's to make it work in your kitchen.

A few baking tips

Store gluten free flours and starches in air tight containers. Make sure they have tight fitting lids. For maximum freshness and lifespan, keep in the refrigerator or freezer, but remember to bring the flour to room temperature before using in your recipe.

Baking times are affected by altitude and temperature. For higher altitudes (or on a very humid day) slightly reduce the amount of liquid in the recipe. At very low altitudes, you may need to slightly increase the volume of liquid.

If you are using glass baking pans or grey non-stick metal baking pans, reduce the oven temperature by 25 degrees F.

When making gluten free chocolate cake or brownies, grease the pan as usual, but use cocoa to 'flour' the pan.

When measuring flour do not pack it into the measuring cup - loosely spoon the flour into the measuring cup then level the top with the back side of a knife. Accurate measuring is very important in gluten free cooking since the flours have very specific properties.

    You're so right that gluten-free "flours" can't be subbed straight across for wheat flours... But that makes it more fun to experiment with them! I love to dream up gluten-free, low carb recipes and have shared lots of them through my lenses. Thanks for the inspiration to dream up more of them!

    If you do decide to add some recipes here, we do have a great recipe module available. Just Browse all Modules, then click on All Modules on the left, "R" and you'll see the recipe module. The best part about it is that is allows for a printable version.
