Successful transition to gluten free food doesn't just happen - you need a plan
You've made the decision to go gluten free food for a new, healthier diet. While this may have followed a doctor visit with a gluten free diet handout and perhaps one or two new recipes - most likely you've started doing some research - gathered up some lists - and are now facing the daunting prospect of dealing with a new diet. Whether you are going it along - and doing this for yourself - or doing this for one adult or one child in your family - you face some tough decisions. Do you set up a separate gluten free kitchen for the one person - or do you take your entire family on the gluten free ride?
The gluten free decision may be prompted a number of specific disorders:
Celiac disease
Crohn's disease
Wheat allergy
Dermatitis herpetiformis
IBS
ADD
ADHD
or any of a number of disorders on the autistic spectrum
However you have reached this decision - you now face a dilemma. If you remove all the family favorite foods, and suddenly made one to one substitutions of gluten free versions of those foods - you face full rebellion. The gluten free substitutions do not have the same taste or texture. There is nothing wrong with them - and you may even like them better - but the difference will be noticed if you make the substitutions overnight.

Think TRANSITION!
We process information about our foods though a complex interaction of sensory and memory inputs. The combination of aroma, taste and texture are processed in conjunction with the processing of memory and emotions. Part of this is to protect us against eating food that has gone bad - we have an immediate reaction when the taste is 'off'. But part of this goes deeper into the part of the brain that stores memories and even that part that stimulates the sense of pleasure. Have you ever experienced a smell while walking down a street - and suddenly you had vivid recall of your grandmother's kitchen when you were 3? Or a 4th of July picnic when you were 10? This complex interplay of memories feeds back to our hormonal response system, which can give us a sense of comfort, or anxiety.If you have chosen to make the gluten free conversion - you want this to work. There are some tricks to help - working with the concepts of how we perceive with our senses and how we record and react with our brain.
1. Understand and acknowledge that gluten free products will vary in taste and texture from gluten containing products. Don't just assume you can take the crackers away with one hand and give the new gluten free crackers with the other, and no one will be the wiser.
2. Take a vacation from the gluten foods in your old diet WITHOUT any gluten free substitutes for at least 3 days. There are plenty of things to eat without gluten - so just remove the gluten from your current meals without trying to make ANY substitutions. This will also allow the taste buds to 'reset' a bit so the introduction of the new products will be easier.
3. Introduce one gluten free substitute at a time - at times when you know a pleasurable experience can be achieved. Not all gluten free substitutes are equal - some will go over better than others. But you will have a hard road ahead if you associate the substitution with a really rotten experience.
4. Bring everyone in on the transition in an important role - in choices, in cooking, and hopefully as cheering section. Encouraging the entire family to be in on selection, reading labels, trying various brands, looking up recipes, and meal preparation will create a more positive environment - make it an adventure.
5. Plan substitutions based on small portions of the meal - not the centerpiece - for at least 2 weeks. Again, the brain is interpreting new tastes, textures, and subtle variations of the substitute foods. If this is integrated into 'normal' meals, the brain will place less focus on the new - and the transition will be far easier.
Going gluten free can have unexpected challenges
When we think of gluten we think of bread and pasta. No big deal - we can find substitute grains and get on with it. Ah but this is when we really get the surprise. In our modern world, gluten is found EVERYWHERE. It is used as a form of stabilizing, thickening and flavoring and is found in everything from ketchup to ice cream and can even be found in some medications, vitamins, lipsticks, . . . . the list goes on and on. Now the magnitude of going gluten free begins to be seen. And the true difficulty of maintaining a separate gluten free and gluten containing household begins to hit home.If you are asking your entire household - and visiting friends to adapt to a new ketchup or ice cream - you can see that this process is truly a process. If you look upon this process as a positive for everyone's health, and a positive for everyone learning to read labels and make wise choices, this transition process can have a positive effect on everyone in your family.
Resources are a major help while converting to a gluten free diet
The task seems daunting - but remember you are not the first to go through this. It has been done. It has been done successfully.
Look for resources that work with your lifestyle and your families needs. If this transition is for a child - get resources for families with children! If this transition is for you and you are a gourmet desert nut - by all means - find the gourmet gluten free cookbooks and have some fun with the process. Yes - it has been done before - don't reinvent the wheel - get the advantage of those who have gone before you - they've made all the mistakes, found the tricks, learned the methods, and survived to write about it.

Most people find the best reference materials are in cookbooks. Even if you are not preparing each of the items yourself - it gives you a chance to learn about the options of substitutes you will find in 'store bought' gluten free products.
