- Here we are, right where we belong.
On May 1, 2007 I was laid-off for a second time in an eighteen year telecommunications career. Phil, my husband, decided to follow suit and leave his traditional job too. We live a frugal lifestyle living in an RV. While we love to travel we stay in one place and explore out from there.There is lots to learn about this new chapter in our lives. We are walkers, artists, entrepreneurs, outdoor folks, travelers and more. We love healthy foods that are gluten-free. I write a blog about this amazing chapter of our lives. We stretch our pennies too.
Quick, Easy & Yummy Meal Plan
A Basic Gluten-Free Menu

Gluten-free and feeling overwhelmed? Here is a simple and easy meal plan to help you along the way.
You will be amazed how much better you will feel if you are allergic to gluten and are just becoming gluten-free. For some with additional allergies this basic menu plan can be easily modified to fit your needs. Besides an amazing improvement in feeling better, meals can be quick and yummy too. This simple meal plan is a great place to start as you juggle your busy life and
discover a new way of eating.
Hearty Breakfasts
#1) Cream of Rice Cereal
- Our favorite is Bob's Red Mill - a rich flavor and hearty grind.
- Resource The Gluten-Free Mall
Cereals & On-the-run foods!
- Many stores carry Kraft/Nabisco Cream of Rice - It's very bland but good in a pinch.
#2) Veggie Omelets (meat is welcome too)
- Our favorite; onion, broccoli, cauliflower with a touch of cheese
- Delicious gluten-free dinner too.
Delicious Lunch
Corn Tortilla Wraps (or GF wraps of any kind) - Simple & Fast
- One slice thin sliced chicken/turkey, beef
- One slice havarti or any cheese
- Yummy mustard
- Small amount of coleslaw down the middle (beware soy mayonnaise / we make or own)
TIPS
- Warm tortilla gently so it doesn't break.
- Fold in half, tuck in to paper towel for easy packing & no hand washing required
Hearty Snacks
-Corn chips or small serving of nuts with an apple or other fruit or baggie of vegetables.
TIP: wash apple - use plastic wrap (no hand washing & easy clean up)
Fast and Friendly Dinner
Base is salad (or stir fry or soup... you decided)
- Green cabbage has replaced lettuce at our house
- Add things you like: tomatoes (roma for savings) cucumbers, cauliflower, broccoli, apple
- Add proteins like chicken breast, canned chicken, fresh fish, tuna,beans/rice,
cheese
YUMMY EXTRA's:cranberries, nuts, feta, raisins, melon balls etc
The meal plan allows for easy substitutions too. If you can afford gf bread and/or want to make it you can do sandwiches for lunch. Use thin sliced cabbage instead of lettuce for a crispy, juicy touch. Pickles are gluten-free too!
Both of us love NOT washing lettuce...cabbage is the prefect substitute. - Easy to use - great shelf life - no prep - crunchy and fresh.
Costs? We eat yummy food and are learning to keep the cost down. The more processed the food the more expensive. We buy Bob's Red Mill Pancake Mix. We have more time now and are learning to make some things from scratch which helps as well. Late in life I am actually enjoying learning to cook.
