Banana Bread Gluten Recipes Bread: Makes 1 loaf
Ingredients
2/3 cup light or dark bean flour
2/3 cup cornstarch
1/2 cup tapioca flour
1/2 teaspoon Xanthum gum
3/4 tsp baking soda
1 1/4 teaspoons cream of tartar
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/3 cup soft butter
2/3 cup brown sugar
2/3 cup egg substitute
1 teaspoon vanilla
1 cup mashed banana (ripe)
Method-for gluten recipes bread
Preheat oven to 350 degrees. Lightly spray or grease a 9 x 5 bread pan. In a bowl combine the bean flour, cornstarch, tapioca flour, xanthum gum, baking soda, cream of tartar, salt and cinnamon. Mix together with a wire whisk. In another bowl combine the soft butter and the brown sugar, slowly add the egg substitute and beat till fluffy. Add in the vanilla and mashed banana. Mix well. Add in the flour mixture till smooth. Pour into the prepared bread pan and bake for 50 - 55 minutes. Allow to cool in the pan for 10 minutes before removing and cool on a wire rack.

If you have wheat or gluten allergies then join the group. It can be annoying and down right impossible to stay gluten free if you don't watch yourself.Finally Restaurants offering Gluten Recipes Bread. Two years of eating gluten recipes, and I am officially worn out. All this time I've been telling myself it's no big deal, and it sure keeps my carbohydrate intake down.
I finally realized that I am tired of gluten recipes bread and avoiding each and every form of normal baked goods, tired of mealy pasta and gritty rice crackers, and tired of explaining to friends and family why the wheat allergy is in many ways worse than the diabetes. Yes it's true! As a diabetic, I could essentially still eat anything, as long as I planned and dosed for it properly. But having a permanent gluten intolerance problem makes for a lifetime of struggle and compromise.
Many are now shedding tears of joy over the fact that some major restaurant chains seem to finally be catching on to the issue: 3 million people in the US with this problem...

It was recently reported that a growing number of eateries are offering gluten recipes and gluten-free menus,apparently including the Olive Garden, PF Changs, Legal Sea Foods on the East Coast and the Outback Steakhouse -- which has a location right here near me!
I checked this out a little and discovered that it is not quite as exciting as it sounds: for the most part, the menus simply tag the items that are by nature gluten-free (fish dishes, salads) and then offer tips like "avoid the bread" or "ask for no croûtons."
This is definitely not the same as actually offering special GF foods (God, how I was hoping to actually munch on a warm bread stick in a restaurant). But it's still pretty great to have each "safe" menu item clearly marked, and to know that the servers will have some idea of what you're talking about when you start asking pesky questions and making special requests.

The LA Times article also mentions a guy named Kevin Seplowitz, a former computer security expert who was diagnosed with celiac disease almost four years ago. He went on to develop the world's first commercially produced gluten-free beer, Bard's Tale.
Looks like we might be on our way to a world where an aversion to wheat is not the Biblical curse it once was.
And what really got me in the gut was the Seplowitz quote:
"I think the most under appreciated aspect of being diagnosed with a chronic disease is the psychological impact... You have to be very diligent about it. If we (make mistakes), we get sick." (My life in a nutshell.)

Cinnamon Raisin Gluten Recipes Bread: Makes 1 loaf
Ingredients

2 eggs
1 cup apple cider
1/4 cup melted butter
1 teaspoon cider vinegar
1/4 cup brown sugar
2 cups rice flour
1/2 cup potato flour
2 teaspoons xanthum gum
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons instant dry yeast
2 finely chopped apples (peeled)
1/3 cup golden raisins

Method for Gluten Recipes Bread
In a bowl whisk together the eggs and the apple juice. Pour the liquid into the bread maker. Add in the melted butter and vinegar. In a bowl mix the flours, salt, xanthum gum, sugar, cinnamon, baking soda and yeast. Pour into bread maker. Set bread maker to basic and 1 1/2 lb. After the first kneading quickly add the the chopped apples and the raisins. After the bread is cooked allow bread to cool for 10 minutes before removing from bread maker. Cool on a wire rack.

Chefs to the rescue for a Celiac patron at Walt Disney World (WDW).

If you or your children have Celiac, then Disney World restaurants are the places for you. I spent the recent holidays at a WDW resort called the Port Orleans and with my celiac problem, my Gluten-free, I was concerned for my diet restrictions%u2026until I asked a simple question, "Can I speak with the Chef?" At every Disney sit-down restaurant (and I ate at five) the Chef came directly to my table. They explained those items on the menu that would be acceptable for me. One chef even prepared a special Salmon dish. And ALL the Chefs provided dessert selections required for my gluten-free diet. So I guess the real answer for those of us with Celiac, is, just ask the question, "Can I speak with chef?". These five words will open an array of restaurants at Disney World that you may have thought would be off limit. So sit back and enjoy that Disney vacation with all, well almost all, the trimmings. Yes, Celiac can change your life but at Disney my food dreams came true.
Have a great Disney vacation and an even more dream-filled Gluten-free dinner with the Disney characters. Bon appétit and thanks, Mickey.

Glad you have this on here. I was mentored in my life by someone who was a pioneer in getting the word out on this subject. She was able to see the information begin to explode across the nation before she passed away...I wish she could see Squidoo and all the new ways info is getting out there.
