You don't have to go totally vegetarian if you don't want to - but try eating vegetarian food for two days a week and you could make a real difference to the environment. You'll be surprised how easy it is!

I'll keep the lens updated with the latest vegetarian recipes that I've enjoyed or had suggested by friends. So if you have any favorite recipes you'd like to share or any recommendations, let me know and I'll try to include them.

Excellent recipe book, while not wholly vegetarian it contains pleanty of good vegetarian recipes for delicious soups. Perfect for this time of year!

Today's Vegetarian Recipe

Spicy Bean Wrap

Ingredients (Serves 2) 1 onion
 1 clove garlic
 1 courgette
 1 tin tomatos
 1 tin kidney beans drained of juice (feel free to add any other beans instead)
 4 tortilla wraps
 Spices(can be a packet mix from tortilla pack) 1 tsp chilli powder, 1/2 tsp cayenne pepper, 1 tsp paprika.
 olive oil
 mozzerella
 oregano

Method (10 mins prep 25-30 mins cooking time)Dice onion
Fry 3/4 of onion and garlic in oil until soft.
Add spices and stir
Add chopped courgette and cook until soft.
Add tomatos and beans.
Salt and pepper to taste.
Simmer and reduce.
Fill 4 tortillas with mixture.
Place tortillas in a greased oven proof dish.
Cover with mozzerella, remaining diced onion and oregano to taste.
Bake in oven at around 180 until top is brown and bubbling.
NB. A variation can be to add some vegetable stock to the mixture with the beans for some extra veggie flavour!.

Easy Vegetarian Risotto

Quick vegetarian meal recipe - 17th July 2009

Ingredients (Serves 2) 160g Arborio rice
 2 cloves garlic
 1 chopped onion
 healthy pinch oregano
 healthy pinch basil
 500ml vegetable stock warm in seperare pan/container
 generous splash of white wine
 knob of butter
 any of the following: frozen peas, tomato, courgette, sweetcorn, pepper
 parmesan cheese for grating
 salt + pepper to taste

Method (30 minutes)

Melt the butter in a pan and soften onion and garlic. Add herbs and stir.

Add rice and coat in butter until slightly transparent. Stir.


Add wine and cook until evaporated or absorbed by rice.Keep stirring.


Add all remaining veg and stir.


Add stock one ladel at a time. Each time stirring until all liquid is absorbed.


When all stock has been used (after about 20 mins) rice should be cooked (if not add more liquid and repeat).


Serve with fresh grated parmesan

Watercress Humous

Vegetarian sandwich filling - Watercress Humous - 13th July 2009

Ingredients (Serves 4) 410g Chickpeas
 1 clove garlic (crushed)
 3 tbsp olive oil
 1 tbsp tahini
 85g bag of watercress
 Pinch cayenne pepper
 Juice of 1 lemon
 Salt + pepper

Method (5 minutes)Drain chickpeas keeping about 100ml of the liquid.
Put 1/2 chickpeas + liquid into a food processor, add everything else except watercress and process until smooth.
Add watercress and rest of chickpeas and pulse until still slightly chunky.

Quick Vegetarian Snack - Homemade Falafel

Homemade Falafel - 3rd July 2009

Ingredients (Makes 6)
 225g Chickpeas
 1 tsp salt
 1 tsp baking powder
 1 tsp cumin seads
 1 tsp corriander
 1/2 tsp cayenne pepper
 2 tblsp oil for shallow frying

Method (5 mins prep 10-15 cooking time)Drain chickpeas and mash in a bowl with all indredients.
Once ingredients are well mixed divide into about 6 and shape into balls.
Place individual falafel into pan with oil and shallow fry until crispy.
Serve warm with salad and pitta.

    Oh wow. Doesn't it look better with the recipes set out professionally like that. Really well done.

    I'd suggest you change how you are adding the image for Falafel. Create a new lens of "images of vegetarian food" to hold your pictures. The include it from there into this lens with an img src="" tag - my lens on using a lens as an image store explains how. I'd added a link in my demo lens so you can find it. Then before the recipe text put a <br clear="all"> (hope that comes out right in the Guestbook) to make sure the recipe text starts below the image.

    I've given you a rating now as well!

    I've set up this lens to try and show people how easy it is to eat vegetarian two days a week. It will be kept up to date with recipes and food ideas that I find, create or are given by friends and family.
