Mexican Food, Italian Food and Frickin Good Burritos.

Growing up in Southern Colorado, on a vegetable farm meant being exposed to some cool produce. One of my favorite crops has always been chili peppers.

The picture to the right shows a pork green chili slopper with fries which is common all over Pueblo Colorado.

Chili peppers come in many different varieties. They can range from super burn your mouth and tongue and make you want to cry hot to totally bland mild.

Don't get me wrong, mild peppers have a good pepper or chili flavor without the heat, but a little spice is all the better.

We put chili peppers on sandwiches, mix and fry with squash, roasted and peeled with spaghetti is great and they are good by themselves in a tortilla.

We have an extremely common dish here in Pueblo, known as Pork Green Chili. I love this dish and most Colorado people like it as well. I prefer the hot version where there are many people who choose mild.

Pork green chili is a mixture of diced pork, roasted and peeled green chili peppers, onions are common but not in all recipe's and tomatoes are always present. We then ad some spices such as garlic, salt, pepper and a smidgen of cumin and thicken it up with some flour. (Gravy texture)

We use whole wheat flour in our green chili and it tastes awesome.

Mexican Food, Italian Food, American Food and about any other kind of food can be greatly enhanced with some form of Chili Peppers.

I love some fried goat cheese and a roasted peeled chili on a roll. This makes a great sandwich by itself.

We smother an open faced cheese burger and some fries with the pork green chili sauce mentioned above and call it a slopper.

You can find a slopper on the menu in a large percentage of restaurants in Pueblo Colorado.
