I got this magazine to help give me more ideas on how to cook more veggies. I absolutely LOVE it. They have such great recipes in every issue. I am never disappointed. And its not chocked full of ad's, as some of those other more well known magazines are. Of the three primary cooking magazines (Gourmet, Bon Appetit and Food and Wine), Bon Appetit is the one about how people cook on a daily basis. There is some travel and restaurant coverage, but it is not the focus of the magazine like it is in Gourmet. There are articles on wine and contemporary recipes combining exotic ingredients, but not to the same extent you find in Food and Wine. Here, the food is the star, and it lives up to its top billing. For people who cook more often than on special occassions, this is the magazine for you. The photography displays the food to advantage and the recipes are consistently well-written and produce delicious results. While you will find complex and elaborate recipes that are fun to make when you have the time, there are also plenty of recipes and menus that you can incorporate into your daily cooking. "Food & Wine" is a classic doctor's office magazine, particularly if that doctor is a plastic surgeon. The target audience is clearly affluent, but the advice and articles work for most anyone.
The magazine offers a wide-ranging, monthly look at several topics: home; travel; restaurant overviews; general cooking info with recipes and tips on quick meal prep; healthy eating/lifestyle; and a few wine-related articles, including food pairings and an insights into wine types and varietals.
The layout of the magazine is easy on the eyes. The design (photography and text) is in keeping with other magazine of this genre; in short, it is high-quality, but not groundbreaking. For the visually-challenged, though, the font size selection is definitely on the small side. As for the writing, it is neither better or worse than the competition. At between 100 and 120 pages, "Food & Wine" is perhaps a bit skimpy page-wise, but still average for the cover price. And while there are many ads for upper crust products, the magazine wisely clusters them in such a way that articles are less broken up over scattered pages than some other magazines - a nice touch.
The recipes reflect the current trends - multi-ethnic, Puck-ish, and with a bent for unusual pairings of ingredients. But to their credit, a simple scan of the recipes shows few of the bizarre, impossible-to-find ingredients that are the bread and butter of some other gourmet magazines.

Cooks Illustrated is like no other cooking magazine I have ever read. It's a sort of Consumers Reports for cooking, aimed at the beginning gourmand. The magazine includes recipes, tips sent in by readers, standard methods for important cooking procedures, reviews of gadgets or food items, and reviews of cookbooks. All of these are accompanied by beautiful black-and-white illustrations and photos of the foods and techniques used (which explains the "Illustrated" part of the magazine title).
My favorite articles are those that delve into the development of the recipe featured. These articles all provide a standard format of describing the "perfect" representation of the items and then the authors explain their process for creating their final recipes and the method by which to read and make the recipes. While this sounds scientific (and indeed, it is), the writing is delightful and down-to-earth, not dry or esoteric as other gourmet magazines. In addition, sidebar articles explore choosing particular ingredients or comparisons of different brands or gadgets relating to the recipe shown and give clear direction where the more elusive ingredients and gadgets can be purchased.
While I am not always confident that the recipes in other magazines or cookbooks have been tested, I am always certain that the recipes in Cooks Illustrated have been rigorously reviewed and have been designed to be made by the average cook, not trained culinary experts. If you are seeking a magazine that provides tried-and-true recipes for basic food items (ranging from Beef Stroganoff to Salade Nicoise), this is a perfect choice. It is obvious that this magazine is a work of love for its editors and writers. I spent a lot of time trying to pick a cooking/nutrition magazine to subscribe to, and this is the one. It has tons of great recipes, nice pictures, and interesting articles that don't repeat the same old food/diet information I've read a hundred times. But probably the thing that sets this magazine apart the most is that compared to every other magazine I've looked at, there are BARELY ANY ADVERTISEMENTS. Nothing makes me feel more ripped off than to find that my magazine is about 40% full page ads. I'm so glad I found one that's not like that. -- Susan Doran (Philadelphia, PA)
