The Sweet Tooth: Cakes

I love to bake. I have been baking for as long as I can remember. I don't have a sweet tooth, I have an entire sweet mouth! A few years ago my grandma made all her grandkids the best Christmas gift in the world. She took all of our favorite recipes and put them in a book for us. She hand wrote all of the pages, over 300 of them! I am going to make a series of lenses full of tips and recipes in homage to my 87 year old grandma and the cooking skills she has passed down 2 generations.

Moist Chocolate Cake

2 cups flour
2 cups sugar
1/2 cup cocoa
2 teaspoons baking soda
1/4 teaspoon salt

Sift above together.

Add:
1 cup vegetable oil
1 cup buttermilk
2 eggs
1 teaspoon vanilla extract

Beat well, then beat in 1 cup of boiling water. Makes 3 round layers or big flat loaf. Thin batter. Bake at 350 degrees for 35-40 min.

TIP
You can use the powdered buttermilk that can be found in the baking isle at the store. I keep this on hand for several recipes so I don't have to have buttermilk expire on me all the time.

Mandarine Orange Cake

One of my all time favorites.

1 yellow cake mix
4 eggs
1 1/2 cups oil
1 11oz can mandarine oranges with juice

Beat above together. Grease and flour 3 round layer cake pans. Bake at 350 degrees for 25 min. Cool

Frosting:
1 package vanilla instant pudding
1 15 1/4oz can crushed pineapple chilled juice and all
Mix the above and then fold in and 8oz container of thawed cool whip. Store in fridge.

Carrot Cake

Yet another favorite! I think I like everything!!!

2 cups flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 cup vegetable oil
3 cups grated carrots
4 eggs
1/2 cup chopped nuts (I leave this out)
1 cup crushed pineapple drained

Drain crushed pineapple and save liquid for frosting. Mix ingredients and bake in ungreased 9"x13" cake pan at 350 degrees for about 45 minutes. Cool cake.

Frosting:
1/2 cup butter
1 teaspoon vanilla extract
3 oz cream cheese
2 cups powdered sugar
1 tablespoon or more for consistency of reserved pineapple juice

This also can be used to make 3 8" layer pans, but will need more frosting for that.

Oatmeal Cake

1 1/2 cups boiling water
1 cup oatmeal

Mix above and let stand 20 min. Add at the end.

1 cup brown sugar
1 cup white sugar
1/2 cup butter

Cream above 3 ingredients together.
Add:

1 1/2 cups flour
2 beaten eggs
1 teaspoon baking soda in 1 teaspoon vinegar
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt

Add oatmeal mixture. Bake at 350 degrees for 35 minutes.

Frosting:

1 stick butter or margarine
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup milk

Boil for about 2-3 min.
Add:
1 teaspoon vanilla extract
1 cup nuts
1 cup coconut flakes

Add the topping as soon as the cake comes out of the oven and put it back in the oven until it bubbles.

Better Than Sex Cake

This is on some of the box mixes, but it is so good I will list it here.

1 german chocolate cake mix (and ingredients to make the cake)
12 oz can sweetened condensed milk
12 oz carmel ice cream topping
12 oz cool whip thawed
3 Heath candy bars crushed

Make cake as directed. While warm, poke lotsholes in the cake with the handle of a wooden spoon. Pour milk and caramel over cake and into holes. Cool. Top with cool whip and sprinkle on candy. Keep refrigerated.

Chocolate Crazy Cake

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
3 tbsp. cocoa
1/3 c. salad oil
1 tbsp. vinegar
1 tsp. vanilla
1 c. water

Combine dry ingredients in mixing bowl. Stir to combine. Add oil, vinegar, vanilla and water. Mix well. Pour into lightly greased 8 x 8 inch baking pan. Bake at 350 degrees for 30 minutes. Cool and frost as desired

This cake came from my other grandma. She told me it was popular during the depression, it was easier/cheaper to make since it does not contain any eggs.

    Hi Coby,
    Love your cake lens and now I'm off to visit your land of cookies. I'm a baker, too. What a great compliment to your Grandma! The carrot cake looks like the same recipe my mom used when we were kids. Maybe I'll send you mom's recipe for pineapple upside down cake (unless you already have it). :)
