The Sweet Tooth: Cookies

I love to bake. I have been baking for as long as I can remember. I don't have a sweet tooth, I have an entire sweet mouth! A few years ago my grandma made all her grandkids the best Christmas gift in the world. She took all of our favorite recipes and put them in a book for us. She hand wrote all of the pages, over 300 of them! I am going to make a series of lenses full of tips and recipes in homage to my 87 year old grandma and the cooking skills she has passed down 2 generations.

Cookies

Need I say more about cookies?!?!? They are easy and probably my favorite thing to bake. They freeze well, so I keep my freezer stocked with several kinds. I prefer most of mine frozen anyway! All my friends love to get into the goodies when they come over. They are fun to share and come in array of sizes and flavors.

They make exellent and inexpensive gifts. I like to get cute plates or containers from Ross or Marshalls. You can usually find something under $2. Make sure to check the clearance isles! Then all you need is some plastic wrap and ribbon. I buy all my ribbon right after christmas when it's on sale! Make sure to buy all colors to use all year round.

I will be listing a few of my favorite recipes here. I hope you try some and enjoy the comfort of home baked goods!

Monster Cookies

The most popular among my friends and family.

Use a BIG bowl!

5 eggs
2 1/4 cups brown sugar
2 cups white sugar
1 cup butter

Cream the above together.

Add:
2 2/3 cups peanut butter
8 cups oatmeal
1 1/4 tablespoons baking soda
12 oz package chocolate chips
1 lb. package regular m&m's

Drop by 1/4 cup on greased cookie sheet. Flatten a little with fingers. Bake at 350 degrees for about 8 min. Do not overbake, they are meant to be chewy. Large batch and large cookies!

I like to do a little variation on these to make them all peanut butter, I love peanut butter! So sometimes I use peanut butter chips and reese's pieces instead of chocolate chips and m&m's.

Lemon Whippersnappers

Super easy and SOOOO good.

1 lemon cake mix
1 egg
2 cups thawed cool whip
1/2 cup or so powdered sugar

Mix first 3 ingredients. Roll into balls the size of a quarter or so. A small scoop works well for this size. They should be fairly small. Coat balls in powdered sugar. Bake at 350 degrees for 12-15 minutes. They shouldn't be brown. Chewy and yummy when done!

This is a versitle recipe. I have made almond cookies with a white cake mix and 1 1/2 tsp almond extract. I have also made a chocolate mint cookie with a chocolate mix and 1 tsp of mint extract.

Molasses Cookies

These are my husband's favorite.

Use a big bowl for this one too!

3 eggs
2 cups white sugar
1 cut butter
1 cup molasses
1 cup sour cream
4 teaspoons baking soda
2 teaspoons ground dried ginger
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves
7 cups flour

Cream wet ingredient and sugar. Add dry ingredients. Mix well and chill for a few hours. Roll out to about 1/4-1/2" thick, cut with 3" cutter. Bake 8-10 minutes at 350 degrees. Frost with powdered sugar icing. Secret is not to over bake so cookie will remain soft.

For the frosting, I don't have a recipe, but it's about 2-3 Tablespoons of butter softened, about 2 cups of powdered sugar and some milk until it's the right consistency.

Rolo Chocolate Cookies

Very popular amongst my friends.

2 3/4 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1 cup sugar
1 cup packed brown sugar
1 cup soft butter or margarine
2 teaspoons vanilla extract
2 eggs
1 cup chopped pecans (optional)
48 rolo candies
1 tablespoon sugar
4 oz vanilla candy coating (white chocolate or almond bark)

Lightly spoon flour in cup and level off in small bowl with cocoa and soda-blend. In large bowl beat butter and sugar until fluffy, add eggs and vanilla, beat well. Add 1/2 cup pecans, add flour mixture. Shape 1 tablespoon of dough around rolo candy. Dip top in the 1/2 cup pecans and 1 tablespoon of sugar. Place 2" apart on cookie sheet. Bake just 7 minutes at 375 degrees. Drizzle melted vanilla candy on top when cool.

Oatmeal Macaroon Cookies

This is my great grandmothers recipe. Very tasty!

1 cup brown sugar
1 cup white sugar
2 sticks butter or margarine melted
2 eggs beaten
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda
1 1/2 cups flour
4 cups quick oatmeal
1 cup angel flake coconut

Combine sugar and melted butter, add beaten eggs, salt and vanilla. Add flour adn soda, stir in oatmeal and coconut. Shape into balls size of golf balls, press down with fork in a criss cross. Bake at 300 degrees for 15 minutes. Take out while soft. Frost with powdered sugar icing.

Soft White Sugar Cookies

These are like those soft white frosted sugar cookies they sell at the stores.

1/2 cup shortening (crisco)
1/2 cup butter
2 cups sugar
2 eggs

Cream together the above ingredients.
Add:
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking soda
4 teaspoons baking powder
4 1/2 cups flour
1/2 teaspoon salt

Roll out thick and cut into shapes or just rounds. Bake at 350 degrees for 10-12 minutes. Cool and frost with your favorite icing. They are good without icing too.

Christmas Filled Cookies

These are melt in your mouth GOOD, but are a little tedious. My brothers favorite!

1 cup soft butter
1/3 cup whipping cream (do not whip)
2 cups flour
Mix well and chill.

Take small amount of dough at a time. Roll out thin about 1/8". Cut with small round cutter or top of pill bottle. Something about 1" across. Set out wax paper and spread some white sugar on the paper. After cutting lay cookies on sugar and then flip with a knife to coat both sides of cookie. Place on cookie sheet and prick the cookies about 4 times with a fork. Bake at 350 degrees for 7-9 minutes. They will be light in color. Cool.
Fill one cookie and top with another to make a sandwich cookie.

Filling:
1/2 cup soft butter
1 1/2 cups powdered sugar
2 egg yolks (you can use pasteurized eggs)
2 teaspoons vanilla extract

Peanut Butter Cookies

1 cup brown sugar
1 cup white sugar
1/2 cup butter or margarine
1/2 cup shortening (crisco)
1/2 teaspoon salt
2 eggs
1 cup peanut butter
5 cups oatmeal
2 teaspoons baking soda

Cream sugar, shortenings, add eggs and beat well. Add peanut butter, oatmeal and soda. Roll in balls. Dip in sugar. Bake at 325 degrees 10-12 minutes.

Potato Chip Cookies

I know these sound weird, but they are really tasty. Try them.

3/4 cup butter
3/4 cup sugar
1 egg yolk

Cream the above.
Add:
3/4 cup crushed plain potato chips
1/2 cup chopped nuts (optional)
1 1/2 cups flour
1 teaspoon vanilla extract

Mix and roll in ball the size of a walnut. Flatten with fork or bottom of a glass dipped in sugar (oil bottom of glass then dip in sugar). Bake at 350 degrees for 10-12 minutes. Watch carefully. Makes about 4 dozen small cookies.

Chocolate Chip Cookies

Technically, I don't like my grandma's chocolate chip cookie recipe, but I don't really like chocolate chip cookies at all. This is one kind I make for my husband that I can have around the house that I won't eat!

I don't use her recipe to make them though. I use the back of the Hershey's Milk Chocolate Chips bag. So, go pick up a bag at the store and try it! Make sure they are the MILK chocolate chips, not semi-sweet. Oh, and use the whole bag of chips, no need to be stingy!

My secret to making these so tasty is the scoop. I use a medium cookie scoop that holds about 2 tablespoons of dough. Level off the scoop and place the flat side down on the cookie sheet. I usually only bake mine for 9-10 minutes. I like a soft and chewy cookie, or rather my husband does! This will make uniform chewy cookies.
