Easy homemade Italian granita recipe

What is granita?
Granita is a dairy-free Italian frozen dessert similar to Hawaiian shaved ice. Its primary ingredients are water, sugar, and fruit. It is therefore a clean, low-fat dessert with intense flavours. It is easy to make and requires very preparation beforehand.
Granita must be eaten as soon as it is ready. Attempting to save some for later will result in a frozen block that will need to be shaved down.
Basic granita recipe

- Serves: 1 quart
Ingredients
- 1 cup pureed fruit
- 1 cup sugar
- 1 tablespoon vanilla extract
- 4 cups water
Instructions
Pour the water and sugar into a heavy saucepan. Heat on medium until the sugar dissolves (about 170 degrees). Let cool for at least one hour.
Once cool, add the vanilla extract and pureed fruit. Combine until smooth with a stick blender.
Pour resulting mixture into a freezer-safe container and freeze for several hours before serving. Every half hour, scrape a fork along the edges of the container to blend in the ice crystals. When it has a chunky, icy consistency, it is ready to serve.
