Grasmere Apple and Blackberry Crumble Recipe
In the fall (or autumn as we call it in the UK ) you can use apples and fresh blackberries for a great dessert. This has been an exceptional year for apples. Anyone with apple tree has more than they can handle, and prices in the shops are low.
This apple crumble recipe also works well if you add seasonal fruits, including raspberries or pears. .An apple crumble is always a favorite, served hot with cream , custard or ice cream.
My apple crumble has a twist- we call it "Grasmere " apple and blackberry crumble, because it has a secret ingredient- ginger. Ginger is used a lot in Lake District recipes, and Grasmere in the heart of England's Lake District, is famous for Grasmere Gingerbread.
This blackberry and apple crumble has been a favorite English recipe for many years at our guest house, White Moss House
To make the blackberry and apple crumble a little more special , if you are serving it to adults, add a slug of apple brandy or Calvados to the fruit mixture.

For the Base; In a heavy based pan, put about 2lb Bramleys or other cookings apples, peeled and sliced, a punnet of ripe blackberries ( about 20), an egg sized piece of butter, sugar to taste, a drop of water and for a special occasion, a tablespoon of Calvados ( apple brandy). Use frozen or canned blackberries if fresh are not available.
Cover with a lid and put on a very low heat till the fruit softens. Stir occasionally to stop it sticking.
Put the mixture into a shallow 8 or 9 inch pie dish and allow to cool.
For the topping;
8 oz ( ounces) plain flour
5 oz butter
2 oz soft light brown sugar
2 oz white sugar
2 teaspoons of powdered ginger
A pinch of bicarb of soda
2 pieces of crystallised ginger, finely chopped.
Mix together all the ingredients except the crystallised ginger. You can do this by hand or in a food processor. The crumble mixture should be the texture of large breadcrumbs.
Stir in the finely chopped pieces of crystallised ginger.
Spread the mixture on top of the cool fruit mixture.
Bake in a medium over for about 30 minutes (tip- put the pie dish on a baking tray in the oven in case any of the fruit bubbles over)
Serve warm, with cream , custard or ice cream.

Mmmmmm blackberry and apple crumble with custard!

You call it Fall, we call it Autumn
Two words for the same wonderful season
Pick up your apples from your farmers market, store, supermarket or from your garden if you are lucky enough to have apple trees. Apples are cheap and plentiful right now.
The blackberries used in the blackberry and apple crumble recipe can often be picked from a country hedgerow. In England blackberries grow wild all over the place- often gardeners regard them as a weed. Beautiful blackberries make a beautiful purple blackberry and apple crumble.
In late August and September blackberries are in plentiful supply.
You call it fall, we English call it aurumn. Where I live, in England's Lake District , the autumn is a beautiful time of year.

Ode to Autumn by John Keats
Season of mists and mellow fruitfulness!
Close bosom-friend of the maturing sun;
Conspiring with him how to load and bless
With fruit the vines that round the thatch-eaves run;
To bend with apples the mossed cottage trees,
And fill all fruit with ripeness to the core;
To swell the gourd, and plump the hazel shells
With a sweet kernel; to set budding more,
And still more, later flowers for the bees,
Until they think warm days will never cease,
For Summer has o'erbrimmed their clammy cells.
Who hath not seen thee oft amid thy store?
Sometimes whoever seeks abroad may find
Thee sitting careless on a granary floor,
Thy hair soft-lifted by the winnowing wind,
Or on a half-reaped furrow sound asleep,
Drowsed with the fume of poppies, while thy hook
Spares the next swath and all its twinèd flowers;
And sometimes like a gleaner thou dost keep
Steady thy laden head across a brook;
Or by a cider-press, with patient look,
Thou watchest the last oozings hours by hours.
Where are the songs of Spring? Ay, where are they?
Think not of them, thou hast thy music too, -
While barred clouds bloom the soft-dying day,
And touch the stubble-plains with rosy hue;
Then in a wailful choir the small gnats mourn
Among the river sallows, borne aloft
Or sinking as the light wind lives or dies;
And full-grown lambs loud bleat from hilly bourn;
Hedge-crickets sing; and now with treble soft
The redbreast whistles from a garden-croft;
And gathering swallows twitter in the skies.

Do you love blackberry and apple crumble and other traditional puddings?
There are those of us who love all puddings, those of us on diets who try to avoid puddings, those who hate all sweet puddings, and those who think the only dessert worth eating is ice cream.
