When choosing eco friendly kitchen equipment, bamboo has to be one of the best sustainable materials on the planet. Obviously you cannot use it to actually bake your green cupcakes, but it can be used in the preparation.Bamboo is actually a type of grass, which does not die when it is harvested, making it a sustainable crop, that can be used in a variety of products.
Bamboo is harder than maple and has the same tensile strength as steel, yet it can be spun and made into textiles.
As well as being a renewable resource, the cultivation of bamboo benefits the environment. The extensive root system of a bamboo forest prevents soil erosion and regulates the absorbtion of rainwater. This reduces run off and the danger of flash flooding.
Air quality is also improved by Bamboo cultivation. Compared to an equivalent stand of trees, bamboo absorbs 5 times as much CO2, and generates 35% more oxygen.

Why use recycled plastic?

Plastic is probably one of the greatest inventions of the 20th Century but because it is not biodegradeable, it is also (in my opinion) one of the greatest environmental hazards in the world.It is estimated that over 100 million tonnes of plastic waste is generated each year, with much of it going to landfill, but because it is not bio degradeable, it breaks down into tiny pieces that can then leech back into the environment - particularly if it has just been discarded onto our roads and into our countryside.
The photo shows a plastic basket that was found floating in the middle of the Pacific Ocean, close to the Great Pacific Garbage Patch.
Recycled plastic can be used in many ways, including kitchen equipment, so how about using recycled plastic mixing bowls when making your eco friendly green cupcakes?

Ingredients for green cupcakes
Our favorite cupcake recipe
For the cupcakes
125g butter - at room temperature
125g caster sugar
2 eggs, beaten
125g self raising flour
2 tablespoons milk
For the frosting
55g butter - at room temperature
85g icing sugar
½ - 1 tablespoons milk
½ teaspoon vanilla extract or to taste
Green food coloring

* 2 quart Tomato Red bowl

How to make green cupcakes
Step by step cupcake making
You will need a muffin tin and cupcake cases
Method
Using a wooden spoon (preferably made from recycled or sustainable material!), cream the butter and sugar until it is light and fluffy
Add the beaten eggs, a little at a time, beating well before you add more
Sieve the flour into the mixture
Fold in gently, using the wooden spoon
Add the milk gradually until the mixtre is smooth and a dropping consistency
Divide the mixture between your baking cases
Bake in the oven for 15-20 minutes until the cupcakes have risen and golden brown
Remove the cakes from the tin and place on a wire rack to cool

Green frosting
Our fav frosting recipe
Beat the butter in a large bowl until softAdd half the icing sugar and beat until smooth
Add the remaining icing sugar, vanilla icing and some of the milk
Add more milk if necessary to get the right consistency to make the frosting easy to ice onto the cake
Gradually beat in a drop of green food coloring, but be very careful not to add too much, it is easier to allow the color to build up gradually until you have the shade of gree you want.
When the cakes are cool, take an icing or piping kit and pipe the frosting onto the cakes
Decorate as required

- Best cupcake lens I've seen --. this is a way out of season update, but I lensrolled it to Easter Baskets: Reused and Recycled. (The cupcakes would still be green, even if they were pink or yellow.)

- Thanks for the information on bamboo kitchen tools - I hadn't considered this before but will do in future. Also, I love the Bella Couture cupcake wrappers and will be purchasing some of them in the future - cute designs and environmentally responsible - whats not to love? Great job.

- AJ, I'll have to try your frosting recipe. Can't find one I really really love. I've been purchasing pre-made but I'd like to find a recipe I can make at home. Nice selection of green baking products too.
