What can one do with green tomatoes?
What if....Your kids get overzealous and pick all your lovely green tomatoes before they ripen.
or............
A summer thunder storm knocks your loaded tomato plant over before the 'maters turn red.
or.............
The weather turns chilly and you still have tons of beautiful green tomatoes on the vine!
No problem. Here are a few recipes using green tomatoes that will save the day (or your harvest)! Recipes are vegetarian except for egg and dairy products.
FYI: the second scenario above was the reason I had so many!

Green Tomato Pasta Sauce
You can freeze this gluten free tomato sauce!
3 tablespoons good quality olive oil
3 medium cloves of garlic - chopped
3 medium (bigger than a tennis ball, smaller than a soft ball) green tomatoes, cut into eighths
1/2 cup H20
1/2 teaspoon dried basil ( 1 T fresh, chopped)
1/2 cup Parmesan cheese, shredded
salt and pepper to taste
You can:
Heat oil in a large pot (Dutch oven or big sauce pan) over medium low heat.
Add garlic and cook about 1 minute.
Add tomatoes and increase heat to medium.
Saute, stirring until garlic begins to turn brown (about 4 minutes).
Add water and dried basil (wait to add the fresh basil), cook covered 5 to 8 minutes.
Check occasionally to see when tomatoes are soft and liquid is thick (like syrup).
Transfer contents to a food processor or blender and add cheese..
Puree.
Transfer to a saucepan and season to taste.
Reheat and serve over hot pasta of choice.
Use fresh, chopped basil as a garnish.
Serve with grated Parmesan.
(Sauce can be frozen)

Making Green Tomato Pasta Sauce
It took me about 30 minutes to make this easy sauce recipe. Click on the smaller pictures to read comments.
Ingredients
Easily chop the garlic for the green tomato pasta sauce:
A "must have" kitchen tool.
Green Tomato Casserole
A pretty dog-gone good recipe for using those green tomatoes!
5 to 6 green tomatoes (thinly sliced)
Salt and pepper (to taste)
1 cup (4 oz) shredded Cheddar cheese
1/2 cup (1 stick) unsalted butter
Saltine cracker crumbs (use about 1 sleeve)
Optional toppings: Potato chips
Buttered 1 1/2 quart baking dish
You can make this recipe by:
Layering half the tomatoes, salt, pepper, half the cheese and one-third of the butter in the baking dish.
Repeat the layers and cover with cracker crumbs.
Dot with the remaining butter.
Cover the dish with a lid or aluminum foil.
Bake at 400 degrees for 40 to 45 minutes.
Yield: 4-6 servings

"Green Mary" Drink Recipe
A Healthy Bloody Mary Recipe using green tomatoes!
The following summery cocktail is like a Bloody Mary, but instead of being red it is-----GREEN!GREEN MARY
4 green tomatoes, chopped
5 green tomatillos, chopped
1 celery stalk
3 mint leaves
1 jalapeno, seeded
5 jarred olives
1/2 cup olive juice (from olive jar)
1 cup orange juice
2 oz lemon juice Fresh horseradish, grated, to taste
12 oz vodka
In a blender, puree all ingredients except vodka. Add vodka to the mixture, then serve in highball glasses. Garnish with celery or mint, if desired.
MAKES 6 SERVINGS

Fannie Flagg's Recipe for Fried Green Tomatoes

- Serves: 6 to 8
- Prep Time: not long if you have done it before!
- Total Time: improves with experience!

Ingredients
- 1 egg beaten
- 1 cup buttermilk
- 1 cup self-rising flour
- 1/3 cup cornmeal
- 1/2 tsp salt
- 6 to 8 green tomatoes - cut into 1/4 inch slices
- cornstarch--optional
Instructions
Mix egg and buttermilk in a shallow dish
Mix flour, cornmeal and salt in another shallow dish
Working in batches:
Tip: rub some cornstarch on the green tomato slices before going to the egg mixture.
Dip tomato slices into egg mixture (let excess drip back into dish)
Coat with flour mixture
Fry in hot bacon drippings in large heavy skillet until brown - turn only once
Transfer to colander to drain.

1. Dip your finished fried green tomatoes in ranch or blue cheese dressing!
2. Use a cast iron skillet for frying the coated green tomatoes.

- This is a great lens. We live in MT and many years the growing season is just not long enough to really ripen our tomatoes. Never even considered a "Green Mary".
