    Only recently did I try green tomatoes for the first time. It was fried green tomatoes. I'm not a fan of tomatoes, but I admit that I did enjoy those. Not at all what I expected!

    This is a great lens. We live in MT and many years the growing season is just not long enough to really ripen our tomatoes. Never even considered a "Green Mary".

    I'm embarrassed to say that I'd never had fried green tomatoes until last year. And with all the tomatoes we grew in my yard growing up, I would have had them daily during the summer! Thanks for this page.

    My plants got attacked by powdery mildew this season so I was left with about 20 lbs of green tomatoes. I made green tomato mincemeat and it came out great. Perfect for mincemeat pies and tarts (original recipes for mincemeat call for beef suet hence the "meat" in the name. I've substituted vegetable oil for the suet with no significant taste difference.) Thanks for the great recipes. I'll have to try some of those next season.

    I try to use grow tomatoes organically whenever possible. Right now I am conducting a comparison experiment using Dynamite Flower/Vegetable 2# and Fertilome Tomato & Vegetable Food to grow tomatoes and vegetables in containers. Both containers are doing exceptionally well.

    Very good lens! I used to have lots of green tomatoes (and lots of red ones too) when I lived on a farm and grew lots of ... well, everything. I did the fried green 'maters a lot, but I wish I'd seen some of these recipes back then.

    When i was a kid my mom used to make fried green tomatoes which I actually liked. once in a while one would be on the sour side and I didn't care for those as much. A friend of mine used to make green tomato pie and other than the texture it looked and tasted like apple pie. Thank you for providing even more recipe ideas. I plan on trying them. Great lens.

    We southerners do love our green tomatoes. Their season is almost here. I'm going to have to try the green tomato sauce. It never really occurred to me to use green tomatoes like that. I have used almost ripe green tomatoes in salsa and that was delicious.

    Green tomato casserole is probably my favorite way to eat them. It's perfect for a holiday dinner. I have a pretty good recipe recipe but I think yours sounds better so I'll give it a try.

    In my part of the world we PICKLE them for the winter, and they retain all their goodness (NO boiling!) and taste great too. Plus my wife doesn't like them, so I get to eat them all :) OK, very simple (metric measurements, you can convert them easy enough):

    5 kg green tomatoes, stalks removed, washed

    1 liter vinegar (white, or try malt, never tried it, probably even better!)
    4 liters water

    300 grammes salt
    150 grammes sugar
    1 small sachet of food preservative, potassium sorbate (wine stabilizer)
    1 small sachet sodium benzoate (E211).

    The last four ingredients should be dissolved in the water and wine first. I honestly don't know if the E-numbers are strictly necessary. They are there to inhibit mold, yeast, etc. but I guess you can try boiling and sealing to prevent this too.

    Once the mixture is dissolved, place all the vegetables in a plastic drum with a lid, pour over the water (you will find it covers it exactly - hopefully!) and the put a plate or something on top, with a weight on, so the veg is kept under water. Put the lid on, but no need to seal hermetically.

    And that's it! It's ready in about 3 weeks, maybe sooner if you prick the tomatoes with a pin beforehand. Also, you can replace any part of the tomatoes with other seasonal veg - cauliflower, carrots, small onions, bell peppers and of course gherkins (dills). Have tried all those. Also, for more taste, put some parsley, dill, pepper, garlic, whatever you fancy in the solution.

    This is called tur?ija, or some variant thereof in the Balkans and in Turkey, and it's how people survive the winter!

    Yes, as soon as I started growing my own tomatoes I was introduced to cooking green tomatoes! They do actually taste excellent, and are very versatile. Never actually made the fried green tomatoes yet, although I love the movie!

    I confess to not being a big fan of green tomatoes. Therefore, I will pass this tip along; Green tomatoes will ripen if the kids accidentally picked the whole lot. The best way to ripen them is to put them in a box, throw a newspaper or towel over top and store in a dark place. I cooked in restaurants for years and the owner bought boxes of green tomatoes which we ripened using that method.

    I've never tried green tomato pasta sauce, but I've occasionally made fried-green tomatoes, which I do like (loved the movie and the book BTW).

    I have been growing cherry or grape tomatoes as our season seems short here, but maybe I should try larger ones next year just to have green tomatoes:-) Nicely done, I am surprised that the sour things are high in sugar. Congrats on LOTD

    I admit that green tomatoes did not appeal to me at all before checking out your lens! The video on "Fried Green Tomatoes" may just have changed my mind. The Green Tomato Casserole also looks delicious. Overall a very informative and eye-appealing lens.

    Congratulations on LOTD! Thanks for ALL the work you do on Squidoo. I like fried green tomatoes and eggplant. I LOVE my Vidalia chopper...I use it for just about any vegetable and recently used it to make fresh homemade salsa. Enjoy your day!

    Thanks for the recipes. I see you have a basset, too (Howie). My rescue bassets are the reason I need green tomato recipes--they recently discovered the tomato plants so I ended up picking all the tomatoes before they did.

    I have green tomatoes and now the summer is over and I don't think I've much hope of them ripening. I had thought they were inedible so thank you for giving me some ideas to save them!

    I love fried green tomatoes and I usually sprinkle it with grated Parmeesan cheese.

    Yum, must try them with the Parmesan! I also heard that if you mix a little cornstarch in the coating mix, it will stick better. Or was the tip to coat the green tomato slice with the cornstarch before adding the coating? Hmm. Must find out.

    I've never seen recipes for green tomatoes before, but they look great - I have started growing tomatoes, and, in the English weather, do get stuck with lots of unripe ones, so now I can use them. I only knew that they could be pickled, but didn't much fancy that.

    Great lens, I have 5* it favourited and lensrolled.

    I have never tried frying green tomatoes. But my tomatoes are not ripening this here. This has never happened. I just might these recipes.

    I love Fried Green Tomatoes and your recipe sounds wonderful. I will definitely be trying the Green Tomato Casserole recipe but it may be next year because all our tomatoes are about gone. I had to laugh when you made the statement about children picking the green ones. My grandson has been known to do just that. Lensrolling this great recipe lens to my Tomato Pie lens. Thank you.
