2007 Champion Green Chili Recipe

Winner from the International Chili Cookoff in Omaha

Sun of Nikki Chili Verde

Ingredients:
2 tbsp corn oil
3 pounds pork loin, cut in cubes
1/2 Vidalia onion, diced
1 14 ounce can of chicken broth
3 tbsp chicken base
1 tbsp hot Italian sausage mix

1 27 ounce can of diced green chiles

½ pound tomatillos, diced
5 Serrano peppers, diced
2 tsp sugar
1 1/2 tsp garlic powder
1 tsp celery salt
½ tsp Mexican oregano
5 tsp cumin
4 jalapenos, diced
1 15 ounce can green enchilada sauce
6 tbsp goya recaito sauce

1 tsp hot green chili powder
1 tsp mild green chili powder

1 dash of hot green chili powder

Salt to taste
Cook additional 15-20 minutes

Instructions:
1. Heat the oil and brown 3 pounds cubed pork loin
2. Add onion, chicken broth, chicken base, and hot Italian sausage mix
3. Bring to a boil - cook for 45 minutes
4. Then add 1/3 of green chiles, tomatillos, Serrano peppers, sugar, garlic granules,celery salt, Mexican oregano, 1 tsp. cumin, jalapenos, green enchilada sauce, and goya recaito sauce
5. Continue to cook for 1 hour
6. Add 1/3 of green chiles, hot green chili powder, mild green chili powder,
2 teaspoons of cumin

7. 30 minutes later add the following ingredients:
2 teaspoons of cumin (this will make 5 tsp cumin total), 1 dash of hot green chili powder,1/3 chopped green chiles
8. Salt to taste
9.Cook additional 15-20 minutes

Ready to serve!

Chili Verde

Ingredients:

2 lbs diced pork

14 oz. chicken broth
1 cup onion, chopped

1½ tsp garlic powder
2 ½ tbsp chicken stock
1 tsp celery salt
1 tbsp cornstarch
1 tbsp cumin
½ tsp oregano
½ tbsp diced jalapeno
1 tbsp dried cilantro
½ tbsp green chili powder
10 oz green enchilada sauce
3 1/2 cups green chili, chopped
1 cup pureed green chili
1 tsp salt
habanera hot sauce as needed

Directions:

Brown pork, drain, then add onion & chicken broth (will not cover meat)
Simmer 1 hour, stirring frequently

Add spices and a little water
Simmer 1 hour stirring often to avoid sticking

Add green enchilada sauce and stir
Simmer ½ hour

Add chopped green chili
Cook for 15 minutes

Add 8 oz. Green chili, pureed
10 minutes later
Adjust with ½ teaspoon jalapeno, 1 teaspoon salt and a liberal dose of habanera hot sauce.

2005 World Champion Green Chili Recipe

Green Chili

Ingredients:
1 1/2 tsp Garlic powder
2 1/2 Tbsp Chicken broth
1 tsp Celery Salt
1 Tbsp Cornstarch
1 tsp Oregano
1 Tbsp Cumin
1/2 Tbsp diced Jalapeno
1 Tbsp Dried Cilantro
1/2 Tbsp Green Chili Powder

2 lb pork, diced
1 cup cooked diced onion
14 oz chicken broth

Instructions:
Brown pork and drain
Add onion & broth (will not cover meat)
Simmer approx. 1 hour -stir often to avoid sticking (1:00)

Add Spices + a little water

Simmer 1 hour, stir often to avoid sticking (2:00)
Add 10 oz can green enchilada sauce
Simmer 1/2 hour (2:30)
Add 3 1/2 cups chopped green chili
(if green chilies are cold increase to boil)
Cook 1/4 hour (2:45)
Add 8 oz hot green chili puree*

10 min later (2:55)
Add 1/2 tsp jalapeno, 1 tsp cumin, 1 tsp salt, large dose habanera hot sauce, fresh chopped cilantro

*Puree green chilies - add 1 Tbsp hot green chili powder per 8 oz of puree

2004 World Champion Green Chili Recipe

Black Coyote Green Chili

Ingredients:
2 lbs Pork Loin, Cubed
1 can 28 oz. Whole Green Chili, Seed and dice
1 tbsp. Salt
2 cloves Garlic
2 cups Water
5 Jalapenos - Seeded and chopped
1 Medium Sweet Onion - Chopped
5 tbsp. Ground Cumin
1/4 tsp. Oregano
2 cans Campbells Chicken Broth
2 tbsp. Green Tabasco Sauce
8 oz. Green Sauce

Instructions:
Mix together Salt, Cumin, and Oregano. Set aside.
Blend together Jalapenos and Green Sauce. Set aside.
Gray pork in frying pan. Set aside.

Combine Chicken Broth, Half the Water, Onion and Garlic in Cooking Pot. Heat until Onion is translucent. Add Blended Jalapenos, Pork and 1-1/2 Tbsp of Cumin mixture to pot. Continue cooking over medium heat. After one hour, add 1/3 can green chilis (blended), 1 Tbsp Green Tabasco Sauce and another 1-1/2 Tbsp of Cumin mixture. After 2-1/2 hours, add remaining green chilis, Green Tabasco Sauce and Cumin mixture. Salt, thicken or thin sauce to suit.
Servings: 40
