Waffles and Pancakes

 

You can make the best waffles and pancakes with the cast iron griddles and pure Vermont Maple Syrup.

To get you in the mood you gotta check out the video "Do you like pancakes?" My daughter drew the cats that keep popping up around the Waffles.

So flip the pancakes and pour on the syrup...

The Best Pancake Recipe Ever 

This is the recipe I adapted from the Joy of Cooking. Often I replace some or all of the flour with Whole Wheat. The butter and sugar can be eliminated. Just one caution, though, don't add more sugar or they will start to burn.

I cook them at a medium heat on a cast iron griddle. The cast iron cooks at an even temperature.

Whenever I have guests come to stay they always ask for my pancakes.

Pancakes1 1/2 cups flour
1 tablespoon sugar
1 3/4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups milk
3 tablespoons melted butter
2 eggs

Preheat a cast iron griddle.

Whisk the wet ingredients together.

Add the dry ingredients and mix just enough to combine thoroughly.

If there are some lumps left, it's okay. When the batter cooks they'll smooth out but if you over mix the batter they'll be tough and won't rise up well.

All the kits like waffles, but Tigerkit gets in so much trouble with the waffles he finally says what no kit has said before. So please stop reading the description and WATCH IT!

My pancake and waffle recipes come from the Joy of Cooking.

The Joy of Cooking was the first cookbook I ever owned and after 25 years I still use it nearly every day.

The recipes are basic and cover most recipes that you could look for. The detailed instructions are very helpful when learning a new recipe but the pages are set up for quick reference when you just need a refresher.

I often give The Joy of Cooking as a wedding gift or to someone just starting out on their own.

Garner Rix will teach you how maple syrup was made in the 18th and 19th centuries. It still tastes as good today as it did in his day.

BASIC WAFFLE RECIPE

Preheat the waffle iron

2 c. flour
1 tsp. salt
8 eggs, separated
1/2 c. butter, melted
1 tsp. vanilla extract
2 c. milk

1. In a small bowl, mix flour and salt. Set aside.
2. In a large bowl, beat egg whites with electric mixer on high speed until stiff peaks form.
3. In another large bowl, beat egg yolks with electric mixer on high speed until thickened and lemon-colored, about 5 minutes.
4. Stir in melted butter.
5. Alternately add flour mixture and milk to yolk mixture, beating well after each addition.
6. Fold egg whites into yolk mixture.

Pour 1 cup of batter for each waffle and cook for about 4 until the steam stops and waffle is golden brown.
Makes 6.

Pancake race ..a strange tradition

Pancake race is quite interesting race where large number of people raced down the street tossing pancake and trying not to drop them. It's relay type race and there are four people in each team and there is about 30 to 40 yards stretch. Each member has to run up this stretch carrying a frying pan with a pancake inside it. On the way, they have to flip the pancake in the air at least twice. When they get the end, they have to pass the pan with the cake to the next member who then runs back. If you drop the cake then you have to pick it up and put it back in you frying pan. Unless you finish the race with your pancake in your frying pan, you automatically disqualified.

Heart Shaped Valentine's Day Waffles

What could be more romantic than crispy heart-shaped waffles, freshly whipped cream and fresh strawberries?

Whipped Cream

1 cup heavy whipping cream
2-4 tablespoons of sugar

1. Whip the cream in a cold bowl until stiff. Be careful not to overwhip or you will turn it into butter.
2. Fold in the sugar.




Basic French Toast Recipe 

French Toast

INGREDIENTS:

eggs
splash of milk
slices of bread

Pure Vermont Maple Syrup

PREPARATION:
Break eggs into a wide, shallow bowl or pie plate; beat lightly with a fork. Stir in milk.

Over medium-low heat, heat griddle or skillet.

Place the bread slices, one at a time, into the bowl or plate, letting slices soak up egg mixture for a few seconds, then carefully turn to coat the other side.

Soak/coat only as many slices as you will be cooking at one time.

Transfer bread slices to griddle or skillet, heating slowly until bottom is golden brown. Turn and brown the other side. Serve French toast hot with Maple Syrup.

Irish Potato Pancakes

IRISH POTATO PANCAKES

1/2 lb. raw potatoes
1/2 lb. potatoes, boiled & mashed
2 eggs
2 tbsp. flour
1 tsp. salt
1/2 tsp. ground black pepper
1 sm. onion, finely grated
1/4 c. milk
1/4 c. butter

Peel the raw potatoes and coarsely grate them on to a clean cloth. Wring the cloth to extract as much moisture from the potatoes as possible. Put the grated potato in a large mixing bowl. Add the mashed potatoes and beat in the eggs with a wooden spoon.
Add the flour, salt, pepper, grated onion and milk to the egg and potato mixture. Stir with the wooden spoon until all the ingredients are combined.

Melt the butter in a large skillet over moderate heat. When the foam subsides, drop 2 or 3 large spoonfuls of the mixture into the pan and cook for 3-4 minutes on each side, or until the pancakes are golden and crisp round the edges.

Remove the pancakes from the skillet, transfer them to a heated plate and cover with aluminum foil to keep them warm. Cook the remaining pancakes, adding more butter to the pan if needed. If necessary, the pancakes may be kept warm in a very low oven. Serve the pancakes as soon as they are all cooked.

I'm so hungry now I've seen your fabulous pancakes and waffles. My goodness, the potato cakes take me back to childhood. Although our family isn't Irish they were something we had from time to time and we thought they were such a big treat, served with butter melting on them.
