Grill A Tomato (or any Vegetable, for that matter)!

Grilled Homegrown Vegetables!

Love growing and cooking your own tomatoes and vegetables? Then you have come to the right place!

I had a squash, some tomatoes and an eggplant just begging to be grilled!

This is how I cooked them on my outdoor grill:


I cut the squash and the eggplant in half lengthwise. I cut the tomatoes in half crosswise--see the images in the photo gallery below. I then brushed the prepared vegetables with a mixture of olive oil and balsamic vinegar and pepper.

This is my recipe for grilling these vegetables. I adapted it from a recipe I found in Real Simple magazine.


  • 1/2 cup good olive oil

  • 2 tablespoons best quality balsamic vinegar~I used blueberry and regular flavors

  • Freshly ground black pepper


  1. Wisk all ingredients together

  2. Brush mixture on the sliced or cubed vegetables

  3. Grill 4 minutes on each side on a medium hot grill; brush a few times with the olive oil/vinegar while cooking



Do not be afraid to try different seasonings (like oregano or garlic) in this recipe. But do not leave out the vinegar--it is the reason these vegetables were so very good!
