Abundant Zucchini

What do you do when you have too much zucchini? Give it away and find every zucchini recipe you can. Years ago we had a plot in a community garden. It was overgrown when we got it, so we started to clear it. In the process we found a few zucchini plants. We decided to keep them and being the prolific plant that they are we had zucchini coming out our ears. It was during this time that I came up with this recipe. I had been experimenting with Italian salad dressing as a marinade and this is the result.

Benefits, Buying and Storing.

Zucchini is high in manganese, vitamin C and fiber. The skin contains beta-carotene which has many health benefits. Since zucchini has a high water content its a good way to add texture and substance without a lot of calories.

For the sweetest flavor, you'll want to select small immature zucchini. It should be firm, with smooth skin and bright green in color.

Being a summer squash it should be bought fresh and used quickly. Store in the crisper unwashed. For best results use within three days, washing just before use.

The Grill

Most important tool for this recipe is the grill.

Hopefully you have a grill already, but if you don't Amazon has a variety starting at $30 and up. We managed to get a freebie that a tenant left behind, but eventually it will die and I'll have to get another.

Grilled Zucchini

Italian salad dressing

Wash zucchini and trim ends. Cut zucchini in half width wise. Turn zucchini on end and slice into about 1/4 inch slices. I like using a crinkle cutter for this, because it give the dressing a place to rest.

Pour some dressing in a pan, lay a layer of zucs on top of the dressing and pour more dressing on top of the zucchini. It would probably work best if this was done in a single layer, but I don't do that. I continue to layer my slices making sure there is dressing on both the top and the bottom of each layer. Let marinade for a 1/2 hour.

Place the zucchini on the grill depending on how hot your flame from 2-5 minutes. If need you can use the leftover marinade in the dish to pour or baste on the zucs.

The result is tender, sweet, flavorful, zucchini. Besides bake in a bread or muffin this is my favorite way to eat zucchini. Even my children liked it this way and they didn't like squash.
